I'm not sure when exactly I almost completely abandoned watching currently airing stuff, and instead choose to pick certain "original author", or director, and just watch anime that originated from them.
I used to pick several shows in season, and follow them, but unfortunately, very quickly waiting for one week to see the next episode, especially if it was heavy on story, it just started to feel like a chore, even if it was actually very decent title at worst.
There was also thing about quality, slowly, but surely, I started to just wait for anime to completely be available on Blu-ray.
Eventually, I would from time to time only catch up with some never-evending weekly shonens, maybe see few following episodes through next few weeks, and/or put it aside until more episodes came out, so I could marathon them at my own pace.
Then, few years ago, when I decided to watch entire (okay, not entire entire, since there are still some old specials that aren't translated, and I didn't watch last 10 or so episodes of second season of Dragon Ball Kai) Dragon Ball series, including specials, OVAs, and movies in order of release.
Of course, there wouldn't be anything weird, or out of ordinary, that I didn't actually decide to watch in exact order, something I don't believe anyone else bothers to do.
For example, the first Dragon Ball thing, outside series, to come out was Dragon Ball Movie 1: Shen Long no Densetsu, which, according to date of release, aired first between episodes 43 and 44; so once I saw episode 43, I would first see the movie, and then continue with series until next movie, or special, or OVA, and so on...
And the thing was, I actually loved it, it just felt right and correct, many movies were obvious to be based around episodes that aired at the time.
The only thing that saddens me is that Dr. Slump, and some other Toriyama's titles still aren't translated.
That kind of approach to watching made watch other anime, or series, whatever, in that manner, choose author, check dates of airing, and watch in order of release.
Currently I'm focused on Toshio Maeda's stuff, and pnce I'm finished, I'll start with Buronson's (known for Hokuto no Ken) as well.
Watching on a weekly basis...
I mean it has its good sides, like being up to date, and easier to talk to other people about current airing episodes, but at the same time, like I already mentioned, quality is often worse than release on disc, censored, and it's really annoying to wait for a week between episodes, sometimes longer due special events.
