Cowboy Bebop and Neon Genesis Evangelion. I've been putting them off for a decade now. I really should make time to watch them, or watch them next. I also haven't seen Dragon Ball, but I don't really have much interest in it.

I think I've watched the majority of the anime listed here.

But I think I'll start Saint Seiya soon.

Tri-Gun and Gundam are the only that come to mind right now, always have too many anime in my "next watch queue" and with gundam I just dont freakin know where to start ~.~

You start at the beginning, like you would any other series.

There's so many I haven't watched yet, but I'm planning to. Like Trigun, Lupin, Berserk, Cowboy Bebop...

I haven't seen a whole lot of older shows in general, and that's mostly due to my dislike for space and mecha stuff, which plenty of the more critically acclaimed ones happen to be.

Maison Ikkoku ,mostly because I learned to avoid anything under the Takahashi Rumiko "brand of quality" like the plague.

There's quite a lot I want to watch, but in the top of my mind:

Gundam (UC)
Rose of Versailles
Space Runaway Ideon
Lupin III

Gundam, excluding G Gundam since apparently it follows a different formula.

I'm sure that there are a lot, but the one that comes to my mind is Cowboy Bebop. Although, I recently purchased the series on blu-ray and intend on watching it very soon.

Reason?
1787 episodes. Just from the 1979 version. There's just too much

Honestly, I really wanted to see what the hype was and the episode count pushed me away. Doraemon for me, too ><...

Start with the 2005 Doraemon if it's so hard to get into older versions.

Episodic shows like that don't need to be watched in order at all, or to completion for that matter.

G Gundam is the Gurren Laggun of the Gundam franchise, except it forgets to be funny.

For me there's a few:

Saint Saya
Macross (I've been put off by the later series where it seems that music changes the univers)
Heavy Metal L-Gaim
Patlabor
Dragonball

Loads of others as well but it's a case of getting to them eventually.

I'm sure that was the intention with Mermaid and Hurricane Gundams, but I don't remember Gurren Lagann being a barrel of laughs either.

I know, the Maxter Gundam gave it away straight off, but it was still painful to watch just the first 3 episodes whilst Gurren Lagann was very entertaining.

I tried watching Gundam Wing and put it on hold. It really bored me TT^TT
I also tried watching Cowboy Bebop and as soon as I saw the spaceships, I stopped.

Now that I've recovered from my mecha-phobia, I think I might get back to those kind of series..

If you look up gundam guide on google or go to the first anime's board(or maybe even all of them) there should be threads about it.

You start with the original and then continue in production order. Why would you begin anywhere else?

I've actually checked out quite a few of the old "classics" from the 70s, 80s, and 90s. Currently making my way through Dirty Pair and Urusei Yatsura.

Some I haven't yet are:

Cyborg 009 (although the recent movie was badass.)
Galaxy Express 999
Lupin TV Part 3 (still working on TV 2)
Ranma 1/2

Cowboy Bebop is not actually a mecha-kind-of-thing.
It's a shame you stopped halfway.
