I was wondering which one would you recommend to watch where there is character development/story progression? I don't mind the monster by episode feeling but I also would like to watch the character grow up and have experiences haha.

Its very hot here, but everything is going good. Got to go to a conference for work that was neat, the guy who invented duolingo was the guest speaker. Have not watched too much anime lately, mostly just listening to music.
