For move 27 I was expecting Be7 instead of Bxe6, trapping the rook on the far end of the board and either forcing a trade, leaving you up a rook, or for it to move, freeing up an attack on Bxe6 the next round.

They use stockfish, so don't worry about it. Stockfish has nightmarishly clever searching algorithms that basically never fail to come up with what are at least reasonably solid moves. Meanwhile, looking at some of these games, there are plenty of moments where most of our players make mistakes.
