The second season was originally scheduled to premiere in April 2020, but was delayed due to the effects of the COVID-19.
The anime series adapts Tappei Nagatsuki's adventure fantasy light novel, which debuted in Spring 2016. Re:Zero kara Hajimeru Isekai Seikatsu: Memory Snow, the first original video animation, screened in Japan in October 2018. Re:Zero kara Hajimeru Isekai Seikatsu: Hyouketsu no Kizuna, which covers the prequel novel included with the first Blu-ray volume, opened in theaters in Japan last November.
Nagatsuki launched the novel on the Shousetsuka ni Narou website in April 2012. Kadokawa began publishing the series with illustrations by Shinichirou Ootsuka through its MF Bunko J imprint in January 2014. The 23rd volume is planned for a June 25 release. of Re:Zero kara Hajimeru Isekai Seikatsu has a cumulative 7 million copies of its volumes in circulation.

I had forgotten about the VA aspect and yes you are right, the situation must be really complicated if you consider that a single seiyuu who is merely suspected to have contracted the Covid-19 can essentially stop the production. I am assuming that all seiyuu are working on a specific scene together and not in different rooms as if no dialogue was happening (I feel that the dialogues would lack of realism otherwise). It might be the only good solution, but that also means that the last SnK season will probably be split into two or three parts (I heard that +30 episodes would be necessary if they did not want to rush too much).

Thank you for this reference. I find the average two months delay slightly hard to believe since a shows airs in three months for a 12 episode series. Even if they started a year in advance (something not uncommon; or maybe, they start working on a project without communicating about it?), they would not be able to produce more than 7 or 8 episodes in fifteen months. Or maybe, most projects are announced two years in advance? I doubt it if we think about shows such as SAO or Haikyuu, but the studio may have multiple teams working on different episodes.
That's true. That last bit requires more info on how Whitefox studio inner operations turns out, which is going to be pure conjecture from my side. Given their release cycle, I only suspect they have a small team of animators compared to other big studios.They did announce Season 2 for Re:zero all the way back in March 2019 and they could have made some animation progress before making their announcement official.
In 2019, WF studios was busy working on Re:zero's Frozen Bonds OVA, Arifureta (co-produced with Asread Studios I think) and some Cautious Hero series. For 2020, they have this movie for Goblin Slayer lined up for a tentative February release. Cue in all the rotations with the respective art designers, directors, VA's etc.
It's the voice dubbing which is the hardest hit aspect due to the pandemic, since it requires the VAs to travel around and groups of them are huddled together in the studio's recording room. I guess similar restrictions apply to the animation group's work environment.

I was a fool to start watching S1 and thinking about watching S2 at the end of the year... I should have waited for one more year lol, since I hate split seasons.
I wonder where this legend that the animation quality has to drop midway comes from. S1 was fine within this perspective.
It's not strictly a legend if I had could have worded it better. As much as 3 months can go into producing one episode. Things get super hectic once the show starts airing and the studio runs into crunch time. If the studio is handling multiple projects (since this is a large variable), the attention to a single show drops. It's just a general trend.
