I never had that problem but I can tell you one solution is always to broaden your taste. If you run out after 266 anime on your list, you probably have pretty narrow taste in anime because there's way much good stuff out there than that. But if you only like a few specific genres or types of shows, you will eventually run out. That is inevitable. It almost happened to me because when I joined MAL I was not watching anything aside from battle shounen, dark seinen/sci-fi/mystery stuff and a few sports anime. If I didn't discover the joys of other genres like romance, slice of life, CGDCT and even some gems from genres I still don't really like (like mecha or BL) I would have definitely run out of of stuff to watch by now.

Another option is to scour the ancient years of pre-2000 anime for all the gems that hide back there. I know it's hard for a lot of zoomers to overcome recency bias, but you have a couple of classics on your list already so you should be fine in that regard. Rose of Versailles, Utena, Oniisama e... are a few that come to mind based on your profile.
I probably regret this post by now.

1) Venturing out in different genres.
2) Seasonal shows.
3) Re-watching shows I like.
4) Taking a break from anime for a year or so doing other stuff, when I come back there will be ~200 new shows and something out of those is guaranteed to pique my interest.

I look at MAL top anime and add whatever catches my interest to my PTW. Not every highly rated anime is good (most of them actually aren't), but probabilistically speaking it's still worth starting from there.

Even now that I'm scraping the bottom of the barrel of the top 500, I'm still finding good anime every now and then. Major is the latest one: it wasn't one of my priorities due to the many seasons and being about baseball, but now I'm loving it.

I usually go through the library on whatever site i'm watching and see if anything sticks out.

Or go through the recommendations page on my favorites and just add whatever's there. You can find some good stuff there.
My waifu is the most wonderful waifu. Mai Valentine.

We're freaking out that we're running out of time, but to do what? Should i stop and think of that? Is there something i could do to slow it down? Live in a day for once, instead of watch it sprinting by

If you really run out anime to watch then watch Korean TV-shows or Western TV-shows. Or read visual novels, Light novels, webnovels, manga etc. Video games are also endless. There are so much things to do and so little time. I can't ever imagine running out of anime to watch. Too much airs every season and backlog just gets bigger and bigger.

I will probably never run out of anime to watch. There are just way too many anime that I’ll probably enjoy. I might have periods where I don’t feel like watching as much, but I’ll never run out. Not sure how it’s possible to run out unless you have really specific taste, but you might just not know about a lot of shows that you’d like.

I'm always adding to my PTW. This is the main reason I started shitposting on forum games. Looking at other people's lists is a good way to find new interesting stuff. Well, sometimes, anyway. Um...very, very rarely. Most people's lists are full of currently airing seasonals, well-known popular shows I already watched or aint even interested in.

I actually find more by looking at the recommendations section of anime I already like: that way it's more tailored to my interests. Sometimes I even look at a voice actor I like to see what other shows they've been in.

-Look for sequels, prequels, and other related works to the stuff you've already seen
-Search for other anime in genres you enjoy
-Delve into the classics and watch some old popular shows (The 2000-2010 golden age has many fantastic shows. The 80s and 90s has good works too.)
-Find a website like Anime Planet that will recommend you stuff based on the shows you've watched and rated
-Find patterns in the stuff you like (common animation studios, authors, directors, music composers, etc.) and add their works to your plan to watch
-Diversify: Step out of your "comfort zone" and watch genres you don't usually watch

Look through the recs on all your faves, if you run out of those then go through other anime you've rated high and skim through recs on those.

Could also go into anime search and plug in everything you're interested in and pick stuff from there. Worst case, you don't like what you pick up so you can drop it and move onto the next thing.

If you have MAL friends you can also try getting into things in their faves list that you haven't seen yet. Same as above, if one doesn't work out then drop it and move on until you find something that hits right.

I don't normally care about this kind of thing but you only have 266 series completed, there's a lot more out there, just gotta dig for it.

Try doing challenges; there are a good number of them and you may discover something that you like. Other options would be to watch seasonals, rewatch shows you like, or simply try to get more and more recommendations.

I wish we can all realistically reach that day. For people like me, backlogs are stacking up, and no way I'm watching them all. The problem lies in breaks or loss of interest in anime at a time. In which, I seek something else to do--like games.

BLOODY AGREE with this. I myself have broadened my taste significantly over time and subsequently i've never had the issue of "low on anime". My ptw list had ±270 entries several months ago but despite having finished 30+ entries since then it's still at 270.

I either go through my PTW list and make an actual written list to narrow down what appeals to me most and if nothing does I either browse different genres that I like and check out anime I haven't marked to see if they sound interesting. Or, I re-watch something. Or, I watch a donghua (Chinese series). Or, I read manhwa (though I do this when I still have a large list of things in my PTW list that I very much want to watch... I just want to read more sometimes. I'm a reader first and foremost).

Also, you could always just ask random people on the MAL recommendations thread in the forums and tell them what you want to watch exactly and they can list you things. I can recommend you some things if you want? From your list, it looks like you tend to lean most toward shounen and slice of life so maybe try some of the following:
