For the record, I have completed 56 anime, including the doubles for multiples seasons and such. I personally think this is quite a lot of anime, and I feel like I know a thing or two about which ones are good. However, it seems like most of the people on MAL have seen well over 100 series. It makes me question whether or not I really know shit, which brings me to my burning question. When are you considered well versed in anime?
I don't really get this whole signature thing, but I feel like I need something down here to participate in the trends.

It depends what you watch. I've watched for less time than you yet have completed more anime because I watch a bunch of short stuff (almost half of my completed anime are 1 episode). There is no magical number.

I know I've only watched 30, but 50 seems like enough? I mean thats not a ton compared to the vets but I feel like thats probably more than 50%+ people. I could be wrong but I'm curious to see what people say.

I don't think I'll feel like I've ever completed enough anime. Same goes for read enough books, seen enough musicals, etc. I'm a completionest. Although, you should see however many anime you want. There isn't one particular number, although I will say that I have noticed that anime fans tend to judge others based on the quantity of anime that they've seen.. Generally for me I'm sorry to say that if you've seen less than 200 anime and tell me you like anime I'll probably like you 0.5% less.. I guess it also depends on what you've seen. For example if you say you like anime the first thing that comes to mind is that you've probably seen Death Note. So if you haven't seen that or others of the more widely known shows then it's like calling yourself a geek without ever having seen Star Wars or something.. In my mind though it's okay as long as you know of them. If you choose not to watch them then you choose not to. No big deal. When I had only seen 50 anime I thought that was a lot, because it probably is, but now that I've seen 500, that also seems like a lot. And I bet that somebody whose seen 10,000 would say that 500 isn't much at all. It's all just opinions. And, besides there are different types of anime fans. You should watch what you want to watch. Don't feel obligated to watch more just because you think you have to to be a 'real' anime fan. Because then you wouldn't really be a fan now would you? Or at least not of the dumb shows you were making yourself watch.

Dunno about how many anime to watch, but you could random pick 3 anime you've never watched from every genre and watch them all if you want more experience.

You will never know shit about anime. No one here will ever know shit about anime until they've made one and put it out there.

But really, if you go out of your way to actually learn the process of making an anime, know what it is you're actually looking for which is "bad" or "good", you know, with more than face value knowledge to back it up, and also if you can identify the tropes, genres, and such, what sells/what doesn't, then I think you'd be well-versed enough in anime.

You can watch every anime in the world and still not know what the hell you're talking about, to be honest.

It highly depends on what are you considering to be well versed.
I've been watching animu my whole life, but if you ask me anything about fighting shounens, I know jack shit about it. On the other hand, I've probably watched 90% of all mainstream and about 70% of more obscure or artsy drama/romance franchises out there. I'm well versed on those, but not so much out of the scope.
Watching a lot also isn't entirely equivalent to being well versed. You can know a lot of the industry and the people working on it by reading interviews, articles and such.

Of course that, here on MAL, being well versed means being able to shitpost all the current airing series of the season with the word "subjective" and "pretentious".

There are no exact number to aim actually, but clearly you can never had enough anime to fully understand the medium, as most of your knowledge of it is only as much of the things that you watched and experienced. Therefore theoretically you can only fully understand it if you have watched all anime there is, but as they keep on making new one, you can't.

But to be fair with statistics, you can safely say about half of the current total number of anime out there should suffice as to 'watched a lot' to make safe generalization. However these numbers are hard to grasps but if we're going by MAL own database, there's about 10,961 anime listed on MAL according to MAL graph engine. You do the math.
