It happens to me quite often ! The majority of the shows I'm gonna list are shows I would've watched anyway, but may wouldn't have prioritized if it wasn't for the character I was interested in.
-I recently started Akage No Anne because of the adorable bean that is Anne and I don't regret it, I love Anne as much as I love her show.
-I watched Miss Monochrome The Animmation because of Miss Monochrome's design, but I didn't really like it. If you're wondering why I decided to watch the second season, I honestly have no idea. It's addictive.
-Akatsuki No Yona for Yona, Yoon and Zeno (yes three characters I'm cheating), and I don't regret this one either. I love those three characters (Zeno even won a spot in my favorite characters) and I love the show as a whole.
-Chuunibyou for Rikka, I honestly wouldn't have watched it if it wasn't for her. Unfortunately I was pretty disappointed, though Rikka's still a good character I really like.
-Eizouken for many reasons but mostly for Kanamori. I love the show and Kanamori, but what's ironic is that my favorite ended up being Asakusa, the one I had no interest in before starting the show.
-Gakkou Gurashi for Kurumi, she intrigued me so much. Well that was another disappointment, but this time I can't even say I really liked Kurumi.
-Gosick for Victorique, and I don't at all regret. The anime is great and Victorique is now one of my favorite characters.
-Kyoukai No Kanata for Mirai... This time that's not even a disappointment, and I already wasn't expecting much.
-Plastic Memories Isla, ultimately same as Gakkou Gurashi. (I kinda like Isla but I was expecting more.)
-Princess Principal for Chise, it wasn't bad but I expected more, from the show like from Chise herself. (Dorothy is best girl in my eyes.)
-Rozen Maiden for Shinku. I really like her and the show, but the one who stole my heart at the end is Suigintou.
-Yuki Yuna for Karin. I love the show, and Karin is one of my favorite characters.
-Zombieland Saga for Saki. I liked her but I once again expected more.
-Kill La Kill for Nui Harime, I've seen a lot of scenes with her on youtube (yes I got spoiled but I'm fine with it) and I consequently decided to binge watch the show just for her because she is the type of villains I love. That is until I realized when she was going to appear. (I've only seen the first ep for now and while I liked it, it's quite particular, so I prefer to wait for when I'm really in the mood.)
-Violet Evergarden for Violet, I really like both her and the show.
-Youjo Senki for Tanya, I've only seen 2 eps for now but I want to go back to it just for her.
-Mirai Nikki for Minene Uryuu, I really like her but the show isn't for me and I don't like Minene enough tostay just for her.
-Watamote for Tomoko after watching scenes on youtube... I've been anxious the entire episode, it felt too real. I still consider going back to it for Tomoko despite having dropped though.
Edit : Funny to see this thread coming back, because I have four characters to add.
-Date a Live for Kurumi, I honestly wouldn't have even approached that thing if it wasn't for her (she has a very good design and a seemingly great personality), and while at first I really wanted to slap myself for having binge-watched 6 episodes just to meet a random yandere (even though I liked her personality) the last episode I watched provided her some interesting depth, now I'm getting back the hope that I didn't watch all this for nothing. (Totally expecting for things to be bad though, that's Date a Live after all. But I hope they won't mess up this time, I really do. This girl has the potential to be in my extended favorites if they handle her correctly.)
-Anzu from Hinamatsuri, I really wasn't interested in the show, mostly because of the character designs but also because I strongly disliked Hina's character when I read the first chapter, but seeing how adorable and well-written Anzu seemed to be, I decided to give it a chance. While I'm a little bit disappointed by how much her character has been recently stagnating, I'm still really glad to watch this show, not only because it just like Hina grew on me, but also because Anzu is indeed adorable and well-written.
-Darling in the Franxx for Zero Two, well I didn't dislike the show but it was a real mess, and Zero Two was both what I expected and the total opposite. I don't dislike her but I'm very disappointed at what they did with a character with as much potential.
-Iruma-kun for Clara, because she is absolutely adorable (yes in that case that's the only reason). Well not only is she adorable but she's also surprisingly well-written, and the show itself is very fun.
I can also add that my main reason for having picked up Konosuba was because of Megumin's popularity that made me intrigued by her, I didn't expect much but she looked like a fun character. I can't say how disappointed I was (Aqua is better imo, and she herself isn't anything amazing). For a similar reason, while I always wanted to watch it Chika kinda convinced me to watch Kaguya-sama (along with the show's populariry), just because of her dance. Well I really liked the show, but while I liked Chika Kaguya definitely became my favorite character in it.
(And yes I know I only named female characters, for some reasons I have a harder time getting hyped by male anime characters before I actually meet them)
