I understand that completely. Everyone learns things a bit differently. Self-motivation and being able to work unsupervised will play a big factor in how well one can do on their own. While I can have a propensity to procrastinate, it's never stopped me from finishing something on time.
As to the simulator, the first one I bought was Mechwarrior 5, and then I found was an older simulator called Wing Commander 4. I recalled enjoying WC4 back when it came out in the '90s, especially as the video cut scenes had Mark Hamill as the character you are playing. And then I bought Fallout 3, which is not a simulator, but still fun to play.
