It seems that generally more effort and thought are put in the OP of anime, but on some occasions there some series that the ED sticks with me more. It's all subjective of course, but for me personally the anime I thought the ED was better:
-Chrono Crusade
-Sound! Euphonium
-A Certain Magical Index
-Jujutsu Kaisen (S1 ED1)
-Psycho-Pass
-Cyber City Oedo
Can't remember which Naruto shippuden opening i didn't like, but they aired it at the same time with this ending, and i thought they should have swapped it. This ending actually sounds like an hype intro opening.
Clearly I have more, but, it's been a while since I've listened to new OP and ED, because of my foray into manga, and there are old songs that are way behind in my playlist that would serve for this question.
I could think of many examples, but the one that completely floored me out of any series I've ever watched is The Tatami Galaxy. Never seen an ending theme that captivating compared to its OP.

@CaptainKenshiro You have a point, but I must say that it's not just Vinland Saga that has a great ending; all of Aimer's songs are on another level.
Natsuyuki rendezvous, Koi wa Ameagari no You ni, or Natsume Yuujinchou have better endings than openings, and all of them were sung by her.
Kamisama Dolls. The OP isn't anything special, being a run-of-the-mill sort of flamenco-style artsy song that never really stuck with me.
The ED, which was sang by the same vocalist, is more memorable. Consistently catchy, with beautifully wistful verses that seamlessly meld into the refrain.
Don't know how I forgot about it in my original post, but the song in the ED for "Wave, Listen to Me!" is amazing, it's been a while since I watched it but I don't remember the OP being that remarkable.
@PurpleAki It's so funny to see "Detroit Metal City" being brought up. I think I liked the opening song, but I remember the ending song more clearly and have listened to it more.
There are so many instances of that to name and list out.
Although I didn't by any means dislike the OP, I probably first remember strongly preferring the ED in one of the earliest series I watched, which was Yuru Camp (obviously I'm referring to season one).
I also definitely prefer the Happy Sugar Life one over the series' OP. The extended version is one I've added to a favorites playlist on YouTube and on my iPod and play often.

Frieren's op are fine (the second one is better than the first one), but the ed is really good. It depicts Frieren's journey and memory from the past really well.
Is the amount of good anime produced by year reducing? I don't think so. But I think the ratio is decreasing. More anime are being made now in the past, so you may think so many anime, so few good ones. In reality, let's assume in the past there were 5 great anime released per year, for now, the number remains still the same.
But I do think the dumb Isekai genre with big ass names is kinda ruining anime.
