Claymore never finished their anime series but the manga is done, wish they'd just keep on with the anime.

I really enjoyed Closers, it was a fun little adaptation of the MMO and I thought that they re-introduced the original characters rather well. Sadly, the last episode was released 2 years ago and there hasn't been any news since.

Probably rurouni kenshin, it needs an adaptation for the final 1/3rd of the manga (I think it technically got a OVA that finished it, but it doesn’t follow the manga so I don’t consider it finished). Great anime, hard to say if it’ll get a full adaptation though considering how long it’s been and the controversy surrounding the author

The "Highschool of the Dead" situation is perhaps the saddest I've witnessed. Everything was going well - the anime was successful, the manga also and everyone was liking the hell out of it - and then the author died, and everything started falling apart. What we thought another person was going to finish the manga, never came true and the chances for a second season was non-existent.

Nakanohito genome It was the first anime that got me into the anime world, I only adapted a part of the manga and it was never finished, although then I read the manga and it is one of my favorites

Don Dracula was cancelled when the sponsor went out of business.

Gundam F91 ends with "THIS IS ONLY THE BEGINNING." Tomino's next anime was set 30 years later and starred an entirely new cast.

War on Geminar has an open ending. It doesn't necessarily need a sequel, but I'll be delighted if it ever gets one. It's the only Tenchi Muyo anime I completely enjoy.

Gakuen Alice and SKET Dance both got outstanding adaptations. It saddens me that neither was able to fully cover it's respective manga.
I also like what little was covered in the Kaze to Ki no Uta movie.
Please Save My Earth got so few episodes that I don't even want to give it a chance.

Pokemon Mystery Dungeon: Explorers of Time/Darkness/Sky has an amazing story, the greatest the franchise has seen! The 1st special covers the very beginning of the game, with no resolution. The next special skips ahead to cover a later part of the game, still with no resolution.

Usagi Drop is the best anime I never want to see finished.

Deadman Wonderland, I read the manga cause I couldn't just leave it like that I mean the anime was fine but I just wanted more and more of it. I'm still hoping for the continuation but at this point I doubt it will get a 2nd season.
Even black bullet they ended it at a major cliff hanger and its highly unlikely it would get a 2nd season as well so I'm thinking of reading the light novel

It kills me to say this, but Space Brothers. They have a lot of material left if they want to make more episodes, but if they were going to adapt more of the story I feel like they already would have at this point, or at least announce it.

TV: Joss Whedon's "FireFly" had so much potential, got the film "Serenity" but there was so much more that could have been with that show.

TV: "The Black Donnelly's" was a great little series, but I guess it never got off the ground either (bonus point's for the incredihot Olivia Wilde)

Anime: Feel like Hinamatsuri had another season in it, was a really good anime.

Bokura ga Ita, but the manga is finished long ago and there's a live action that covers the part after the anime, so those are some reason for the anime to never get a continuation.

Gintama, as it only has the final movie to adapt the rest of the manga.

Attack on Titan, probably by the end of next year, if it gets split in two (Blu-ray is confirmed for 16 episodes so far).

Pet Girl of Sakura-sou, only adapts 6 and a bit volumes of the novels, though I'd rather leave it at that as I looked ahead at the source material and it turns to shit.

Monogatari series, loads of volumes yet to be adapted.

Hajime no Ippo, enough content for hundreds of episodes.

One Piece, another 5 years lol.

Slam Dunk, a masterpiece manga series, didn't adapt the last two games.

3-Gatsu no Lion, needs continuing.

Let's admit it, the mainline Pokémon games don't exactly have the strongest stories, and that was perfectly fine; those games were fun to me because of the adventure throughout the region and the friends you make—the Pokémon you capture—throughout that journey. I know that sounds super cheesy, but I didn't realize this until I played some of these games when I got much older and thought about how good it felt to raise a team from start to finish with Pokémon I liked and had fond memories with throughout the game. I think it feels especially good if you bothered to give your Pokémon special nicknames and tried to do side activities like joining Pokémon contests, taking them on walks, or petting and feeding them like I did.
So for me, these games were cool for stuff like that. But in terms of the actual stories that Game Freak puts in these games? Uh... well, sure, the 5th and 7th generations are well known for their focus on the story, but when I immediately think of games with amazing stories... they don't really come to mind. (Sorry. I appreciate the effort in gen 5's story though.)

Explorers of Time/Darkness/Sky, on the other hand, definitely does. The story is just so good.
The story in this game is so zetta good that I always get sad after reminding myself that OLM never adapted the game beyond two specials—one being a loose adaptation of the beginning of the game (with some interesting changes and an anime-original job request) and one adapting LITERALLY ONE OF THE LAST PARTS OF THE WHOLE GAME. It is such a damn missed opportunity that nobody decided to make a whole anime adapting this game's main storyline. The story starts off decently with its fun and lightheartedness while also slowly introducing the player to its world, and has some great dramatic timing, especially when shit gets real halfway through and the stakes continue to ramp up from that point on. I seriously did not expect to get this invested into so many of these characters (including the side ones!), which further surprised me since this is all coming from a Pokémon spin-off.
Spin-off games in general don't seem to get mentioned that much... unless you're in the Pokémon franchise, where it's usually this game that gets mentioned.


edit 15 min later: ontopic to OP's question—I don't think I have any favorite unfinished anime in mind right now

Zetsubou Sensei and Gunslinger Girl, I'm satisfied with the way both anime ended though. Gunslinger Girl did get a sequel by a different animation studio but I'm not interested. Houseki no Kuni season 2 would be nice, still hopeful.

There are a bunch I could list but I'll give my shout-outs to these two.

March Comes in Like a Lion and School Rumble

Two incredibly underrated shows that are very different from eachother. The first one is just so friggin good that I want a third season now. The latter actually had it's third season cancelled which was very saddening for me.

I guess Nana could be considered "dead". The story is unfinished and there hasn't been a chapter since 2009.
The anime covers something like 1/3 or 1/2 of the manga, but there is little to no hope for a second season...
I still hope it will come back someday.

Hunter x Hunter and One piece stuck on the 3rd arc of hunter and about ep 130 on one piece. just don't have enough time and willpower to complete them, but i really do enjoy what i have watched so far.

Glad to see another D.Gray-man enjoyer in the wild, but judging how to manga is publishing about 4 chapters a year it might end up being unfinished manga/story in general, truly a sad thing.

Umineko and Spice and Wolf will be my picks too. I think Umineko got a slight little hope with current anime of Higurashi by the way.

An adaptation of the last arc of Slam Dunk, which is by far the best arc, won't hurt too.

Mahoutsukai no Yome - M.I.A. since 2018, last seen 2 years ago, awaiting season 2 (This one is still relatively recent though so it's probably just more of a matter of the manga having to get further along)
Aku no Hana - M.I.A. since 2013, last seen 7 years ago, awaiting season 2
Kodomo no Jikan - M.I.A. since 2009, last seen 11 years ago, awaiting season 3
Petshop of Horrors - M.I.A. since 1999, last seen 21 years ago, awaiting season 2

I would say those would cover the ones among my top favorites and those I truly want to see most.

Umineko no Naku Koro ni has been mentioned, but since the 2009 anime was quite botched and flawed massively in pacing and writing/characterization to me, a 5/10 at best, I think it might be best if it just gets a reboot rather than direct continuation of the 2009 iteration. I can read the Umineko manga or VN in the meantime if I so choose, and there's hope of it now with the Higurashi Gou sequel/soft reboot and Umineko-related lore being interwoven into that.

Others I would like to see continued ASAP, regardless of any lack of likelihood, are Centaur no Nayami (M.I.A. since 2017; 3 years), Flying Witch (M.I.A. since 2016; 4 years), Juuni Kokuki (M.I.A. since 2003; 17 years), Zipang (M.I.A. since 2005; 15 years), and Gakkougurashi! (M.I.A. since 2015; 5 years)

I guess it would be 3-gatsu no Lion. I hope it will get more seasons, as I know this title is pretty popular and well-known in Japan
Oh and I forgot about GTO. Maybe it looks like a finished story in anime, but the manga have a lot more. This title need a restart like FMA->FMAB or Shaman King

GTO, they only animated half of the story and put a different ending on it...We need an adaptation of the entire manga

I think the anime already covered the best parts of the manga. When I tried reading the manga, the only unadapted story I enjoyed was the very 1st one.
