Also, I saw that you recently completed Spice and Wolf. I get why you have mixed feelings because the original adapation adapted volume 1,2,3 and 5. Fortunately, the new 24 episode adaption starting on April 1st 2024 by a different studio seems to want to do a more faithful adaptation. So if the cover Novel 4, it'll be different in it's last 6 episodes (19-24). However, I could be wrong and they could do a mix of novel plots like in the manga which covered bits and pieces in a mostly organic way, but skipped some stories seen in the novels and anime. For example, the manga did cover Novel 4.
As for your question on your list about how it's gone on this long? Simple. Original series was 17 volumes, but 3 were short stories, so it's actually 14 volumes, which is a little more reasonable. Also the author did finish the story with the 17th volume (and a large out of print omnibus), however for the anniversary years afterward, he came back with new volumes that are a mix of short stories (some from Holo's perspective) and a sequel story involving Holo and Lawrence. He's also writing another sequel series with one character who showed up later in the novels/manga. Currently up to 9 volumes.
As for why he can keep writing stories like this, its because they're a journey. And as we know journey storylines take their time, similar to Kino's Journey (up to 23 novels), classic Digimon or in a 100 episode anime like Dragon Quest: Adventure of Dai.
Hope that clears things up, but if the series is not for you, I understand. I won't try to convince you otherwise.
