Two anime I like for world building
1.A lull in the Sea-A world under sea.It was just awesome.She sunlight falls under water,it was just daazing.When winter comes all water frozes making it like a white castle.
2.Houseki No Kuni-A single Cresent shape grassland surrounded by water.On land a single vast building making its scenery beautiful filled with greenery.

One Piece bc of its unique world structure, the split 4 oceans, the grand line and red line, hundreds of unique islands (including sky islands) with different tribes, culture, people , treasures and history thats all linked to a part of mysterious historical period called the void century. All this is just like an introduction to what the world building in One Piece is like, there are many more reasons as well but it includes spoilers, This world truly fascinates me and its one of the reasons why One Piece is my fav work of fiction

Nausicaä of the Valley of the Wind and Ginga Eiyuu Densetsuby far. Second to that would be the likes of Berserk and Beastars. The ones i can think of the top of my head that cratch or come close to the greats of Western Fantasy/Sci fi worldbuilding.

One Piece. I don't feel like going in detail right now, but I love how the series gives the world so much life outside of the main characters. One Piece's statement is that it gives its surroundings life outside of the protagonists, nothing exists solely for the main characters only. The world is so damn expansive and it does it through both introducing character and new locations. At this point there are over 1,000 characters. One Piece was never about the destiny; It was about the journey.
I don't think I'll ever be able to find an anime that has a similar longevity or scale, save for maybe Detective Conan, but even the worldbuild in that anime is done entirely different and is more about the character interactions rather than the conflicts of the land itself. Plus, One Piece's underlying themes are unmatched, so ambiguous and better perceived with the longevity itself. Themes of family, folklore references (these are the more direct themes), and gosh, the yin-yang, the double-meanings. These themes have more than one interpretation and way to see it all.

Some of the ideas that One Piece explores are unmatched. The tension, the buildup and release, the use of comedy for relief while STILL knowing when to kill it to be serious (Enies' Lobby? Best example. Marineford? Even better example. After a certain chapter/episode in Marineford of which I will not name, but if you've read/watched you know what I'm talking about, basically all of the comedy is stopped until the Luffy flashbacks.) One Piece seems to have familiarized itself with its arc structure at this point, in that it creates very long story arcs to explore its usage of each character and expand on the environments.
One thing I do wish is that One Piece would show its political world more with the Marines and all. Because that's some good shit. Clearly that path isn't for the Straw Hats, but every time that side is shown, it tends to be part of the best arcs. Sabaody, Wano, and to a certain extent the second half and end of Dressrosa...

Seriously. I don't know how much emotion I've felt from One Piece. I don't know how many times I've broken down in tears from this anime and manga. It's just so intricate and touching with its worldbuilding alone.

One Piece, its a great feeling knowing there were legends before you and the good ones are willing to help the new legends. (What do you know, that is just like parents and grandparents, except this is shounen so its powers and...... lots of tears and hardwork)

Children Who Chase Lost Voices, or "Hoshi ou wo Kodomo" instantly comes to mind to me as Makoto Shinkai's best work grounded in a fantasy setting unlike his other works that mostly take place in the real world i.e. Tokyo. Despite being a highly criticized film for deviating from Shinkai's previous work and allegedly being too inspired by Studio Ghibli, I think Children Who Chase Lost Voices offers a rich world, specifically the world of Agartha and the relationship it plays with the surface. The only issue I have is most of the ideas and concepts are hastily presented, and not delved deep enough, but that is attributable to it being a roughly 2-hour film and not a TV-series anime, thus there simply isn't enough time to flesh out the ideas presented. However, it would be great if Shinkai returned to the world of Agartha in his future works, or maybe even just writing, to explore the complicated and fascinating world that he created which we the viewers only got a glimpse of in the film.

UC gundam especially early UC. One advantage it has though is that it consists of multiple series and side stories released in the last 40 years.

Ginga Eiyuu Densetsu has an extremely well detailed universe, we even have some very interesting documentary episodes in the series. A monument of the space opera.

Kemono no Souja Erin is a reference in fantasy worldbuilding. Although the anime tells Erin's daily life (female MC), we get essential information about the conflicts between the clans, the country's history...

Ghost in the Shell Stand Alone Complex, Planetes and Honzuki no Gekokujou are also very good. The worldbuilding is not massive and the information seems very relevant to the plot. We do not have flashbacks, documentary episodes to explain the setting, just drip-feed informations through the episodes.

Kyoukaisenjou no Horizon by far.
Because the novels simply have the most astounding level of world building you can encounter.
One piece btw is in the contrary an example of a world building that is badly done. It's vast, yes, but terribly done. Kyoukaisenjou no Horizon is vast, but everything is deeply connected and feels like everything influence everything , interconnected through many things like economy, politics, ethnics, History, religions, culture and so on. You get more than 20 factions active for their own goals, their own problems that can be anything from politics to military to religion to economic to History to ethnics to personal level of some of those peoples , interconnected, with some of the most major events happening between them in places that the protagonist group isn't, none of those factions feel like bad guys, they're simply working for their own country or save what they care for; they're tremendously unique, the number of important character that we follow through the story is ridiculously high, heck even the number of followed romance plot is absurd even though it's not a romance story; it gives life to a world that has one of the craziest world design you can find in fantasy.
And all of this world building is even completed by other stories in the same verse like Owari no Chronicle that shows the world sometimes thousand of years before or after the events of Horizon.

BTW HxH is even worse than One piece really. You introduce early on phones with GPS so the world has satellites rotating around scanning the surface in details but somehow most of the world is unknown? uh? the whole dark continent doesn't make any sense.

Honzuki no Gekokujou is an interesting take on world building. It really takes the idea of discovering the world through the eyes of the protagonist to the next level. If the protag doesn't leave her house for the first book, you ain't gonna know more about the world than her house. The world feels well built but the slow reveal through the protag 's eyes is really what makes the reader feels so much interest for every new thing that we see or learn from it.It's basically the difference between ingesting quickly a good meal or savouring to the max every bites of it.

Made in abyss world building is phenomenal and the best in my opinion , I would say this would be mostly due to setting that is produced is damn unique and these kind of "different ecosystem" settings do create a rather sense of you being a part of the show , also there is always something new to in the setting due to their continuous adventures that doesn't bore you

In my opinion, one of the best world building in anime has to be Full Metal Alchemist Brotherhood, it explains almost everything that happens in the world from politics, all the way to alchemy. (You know what im talking about, if you watched the anime)

Honorable mentions are:
-The Promised Neverland (Most of the world building happens in the manga, but i hope it will get its anime adaptation soon)
-Beastars
-Boku No Hero Academia

Probably not the best however I just wanted to mention it because it's currently airing and has really great world building: Deca-Dence. Every episode so far seems to add 5 new layers of the world on top of an already amazing world from episode 1.

Bruh there's no competition here, it's definitely One Piece. It's one of the only few fictional worlds I've ever felt fully immersed in. Very few anime succeed at world-building that is not through the eyes of the main characters and actually just a wide-view of the world itself and the lives of different people in it. The world isn't described and built upon only when the plot requires it, but we get bits and pieces of world-building every few episodes which may seem unrelated to the events happening to the main characters at that time, but show their relevance later on in the series. In One Piece, you really feel that there are people who actually have their own lives and their own dreams and adventures, not necessarily in connection with the main cast.

The world thus feels real because everybody's doing their own thing, the show is centered around our Straw Hats but it certainly doesn't feel like the rest of the world is stagnant while our heroes are the ones moving things forward. Everybody has their own agendas and experiences and the world of One Piece really stresses it. People who say One Piece isn't enjoyable or even good are entitled to their own opinions as that's a subjective aspect, but anyone denying the extensive and absolutely amazing world-building of One Piece is gonna get SPANKED

It's been said a couple of times above but the best world-building I've seen is Twelve Kingdoms. It just feels so carefully thought out and well-realised.

I would say One Piece stomps over almost everything else listed here... Aside from that I would say Made in Abyss is pretty great in that department.
