Details for New Initial D Movie Legend 2 have been announced. The title will be Dokusou, and it will premiere on May 23, 2015.
The BD of Legend I will be released on December 26, 2014.

The TV series changed quite a bit of the manga iirc since there's not much material when the first stage came out. They've also adapted the final race of the manga already so I don't about the new materials you're talking about. I heard the first movie adapted the manga more faithfully compared to the TV series so things might be different for these trilogy, not to mention the huge upgrade in art and animation which is a bit off putting in the TV series imo.

The trilogy is a retelling of the original manga so you can just start with Legend 1 without watching the previous adaptations.
