A bunch from Kino's Journey come to mind, but here's two that I really remember. Still, the last one might had come from the light novel and not the anime, not sure. It still stuck in my mind though.

I watched Evangelion during a tough emotional part of my mid-teens, and that quote has always stuck with me since.

Also "It's an intellectual drink, for the chosen ones." Okabe, Steins;Gate, refering to Dr. Pepper.

My favourite soda is Dr. Pepper, so this quote was just all kinds of awesome when I first watched Steins;Gate, helped make Okabe into one of my favourite characters too. xD

I found myself writing tons of quotes down while watching Ergo proxy.

Just a few:

Not 100% convinced Shiki in god killing mode can kill Saber using avalon. Tis the kind of thing that would require a creator quote to be sure of though, I imagine.
