Are there any Intros/Outros that stand out to you as being different from any others that you have heard. For me the ones that come to mind are the Monster Intro and first outro, they're very unusual in their almost religious feel, the outro especially being incredibly slow and almost hypnotic.
Also I think Mushishi is a worthy candidate, first of all with the intros being sung by English speakers and also their styles make them stand out to me.
Then I guess the weird death metal Death Note intro. That was so far away from the first one it made me laugh when I first heard it.

Denpa Onna OP, the first Zetsubou-sensei OP, Tsukuyomi OP, the Sodachi OP's, anything by studio Shaft really.
Sore ga Seiyuu is also pretty cool, literally a Cruel Angel Thesis on the first episode outro, and the Zetsubou-sensei OP on the second episode (kinda like what they do in Lucky Star).

Death Parade Opening is amazing but defiantly unusual especially considering what the show is like

also the Alderamin op is unlike any other opening I've heard before with a pretty cool and unique instrument in the mix.

When I read the title I also instantly thought of Monster. The second ending was so creepy but it fit the mood perfectly.

For me when I was new to anime the opening of Samurai Champloo struck me as unusual, it's just rare having hip-hop/rap openings I guess. Also instrumental openings like "Tank!" in Cowboy Bebop (although everybody knows it) are not quite common.

Animation wise I loved the DRRR/Baccano openings introducing the setting and all the characters in the opening with showing off their role and relationships between the cast.

Aria, bubblegum crisis and the 4th tenchi muyo ryouoki do this cool thing where they have a unique opening animation (and sometimes song) for each episode that takes place in the episode's story if that makes any sense.

I'm a fan of unusual OPs. Most of my favorites are either not japanese, only instrumentals or include some fringe instruments in some capacity.


















There's clearly more examples of fantastic instrumental OPs, from Bebop to Baccano but I tried to pick a selection of stuff not that widely known.
I just want to add two more:

This is just different in terms of being the best 80s OP/soundtrack. It stands out through quality not necessarily through being that unique in its sound:


And this just embodies a dead era of OPs that I love:

The bagpipe intro for master keaton reminded me of Dark Crow the second intro for Vinland.

The only unusual OP I can think of is Beastars because that is the first time I had ever seen stop motion used for an OP in anime

Haibane Renmei's intro as said above.

Also Ef - a tale of memories and melodies, both intros are in English but sung by Japanese artist, both also has the Japanese version for the last episode.

I think that the op of Kado: The Right Answer isn't that unusual, but it has something that makes it strange. Also, the openings of Monogatari made by Ueda, the artstyle is unusual, and the whole thematic around them. There may be some more in my list, but I usually skip the intros.

For me i'd say Boogiepop Phantom. Out of all the psychological anime i've seen thus far, that opening is really groovy.

Paranoia Agent's op is unmatched in weirdness.

Maybe not unusual but ohh, when it's both jp+another language not just for aesthetic but because it's related to the story is not something we get often, like Umineko's op that uses italian or SnK's with german.

Higurashi Kai's op is another that sticks out to me for how clever it was to use the op from the previous series but played backwards.

Zoku Owari’s vocals are literally reversed and it’s only 60 seconds not 90. Don’t know how you can get much weirder than that.

Ugh this page takes a while to load due to the large number of YouTube embeds.

Anyhow, I've seen two instrumentals so far. While instrumental OPs/EDs are common for western TV shows, they seem quite uncommon in anime. Specifically, these two are:
* Brynhildr in the Darkness OP
* Yona of the Dawn OP1
* Baccano OP
* Cowboy Bebop (technically not entirely instrumental, but close enough)

Then there are the non-Japanese vocal songs. Off the top of my head I can think of two:
* Fractale ED - "Down by the Salley Gardens"
* Neon Genesis Evangelion ED - "Fly Me To The Moon"

edit: somehow I forgot Baccano and Cowboy Bebop. then again, I haven't actually watched those two shows, so it's not that big a surprise.

The Shinobu mail opening for Owarimonogatari has a really unique animation style, its one minute long, and i'm pretty sure all of the lyrics are German. Also the first Vinland Saga opening has actual English in it.

I can't think of " unusual " anime endings more unusual than Hellsing Ultimate ending
I have never seen a credit crawl in anime before or since. and such an epic orchestral score that fits the tone of the show but strange a bit for anime

Umineko's outro (YAMI WO KIRISAKU OH DESIRE) sung by Kinzo is very weird. I hated it at first because it sounded like intentionally bad singing, but I slowly grew to love it.

Lucky Star's outro (from episode 13 onwards) with live action Minoru Shiraishi dancing around probably takes the cake for weirdest, though.
