I'm addicted in japanese culture like: mythology, tradition and history itself.
and recently i think... there should be some anime about all that dont ?
so before i went to search my ass off, I remembered, "I just have to post on MAL"
and here iam, pls send some historical, traditional, or some animes that have an historical background like, kimono, japanese gods and stuff like that. ^^

I'm not quite sure what you mean, but i chose some that are set in the past and i personally enjoyed
Rurouni Kenshin: Meiji Kenkaku Romantan (is the one that probably best fits your request)
Oda Nobuna no Yabou (this also fits better than the others)
Afro Samurai
Akatsuki no Yona
Berserk: Ougon Jidai-hen I - Haou no Tamago (its a Movie)
Madan no Ou to Vanadis
Samurai Champloo

Rurouni Kenshin: Tsuioku-hen -- See: Boshin War
Nobunaga Concerto -- Per title.
Musashi: The Dream of the Last Samurai -- Per title. This is a documentary --anime style.

Culture:
Chihayafuru -- See: Karuta.

Chihayafuru +1 - 'sports' series centred around the traditional card game, Karuta. (Kimonos mandatory)

Showa Genroku Rakugo Shinjuu - historical drama themed around the traditional Japanese storytelling performance art.

Hanasaku Iroha - follows young schoolgirls as they work at a traditional Japanese inn.

Sakamichi no Apollo - romance/music set in 60's Japan and all that jazz.

Mushishi - a historical Japan where the mysterious spirit-like mushi creatures live as port of the ecosystem.

Samurai Champloo +2 - a trio's adventures in Edo Japan, spiced up with a bit of ahistorical hip and hop.

Natsume Yuujinchou - a take on Japan's kami/youkai 'spirits' - a young teen who can see them and his tales.

Nobunaga Concerto +1 - Time-travelling historical to the warring Samurai era. Quirky, comedic, quick paced and dramatic.

Hyouge Mono - set around the same iconic period of Nobunaga, this historical drama mixes a Japanese art (most epitomised in the tea ceremony) with the politics and figures of the time.

if you mean a series with plenty of references to Japanese culture, then
joshiraku

if you mean a series with sword fighting (which i suspect actually appeals more to the west), then maybe sword of the stranger (movie)

chihayafuru is a pretty fun series as well (about karuta)
and Saki (about Japanese mahjong)

Saki (mahjong)
Ikoku Meiro no Croisée (about cultural differences between France and Japan in the 1800s)
Shirobako (more modern, about the anime industry)
Baseball Girls (about the globalization of Japan in 1925. Half of the girls at the school still wear yukata to school. The main focus of the anime is about women's rights, but there's still an important theme of Japan)
Kaichuu! (Japanese archery. It's a 16 minute trap anime, but it's still about something Japanese)

As with what @Shonen-King has suggested, pretty much all samurai and martial arts anime are very Japanese and so are many game anime (read the descriptions first for these).

For another recommendation, although it's not about Japanese culture so much, Yama no Susume has a lot to do with Japanese geography as it's about mountain climbing in Japan. Some of the mountains have spiritual and cultural importance so it's worth a watch if you're into that.

setting is old japan and ... it's a great anime.
However, since I'm not an expert I can't juge how realistic the setting is.
Same problem with other animes actually, I try to be careful, we never know how near or far from the reality some interpretations of a periode are.

Samurai champloo (despite the funny anachronismes) Princess mononoke (it's a movie)
