But for HF, isn't Rider supposed to be a main character. Not only was she the servant that was there the most but she is best girl

Caster does have a bigger role than Lancer in UBW, I agree with what mira said. Saber didn't do so much in here after the prologue. Saber was only involved in fights, barely in the meat of the plot

Caster is one of THE deepest and most morally complex characters in whole FSN. Majority of UBW's worth is due to her personality and depth.

Lancer has way less focus than her, but still way above Seiba whose main role is just to look pretty and serve as plot device.
