hi i am looking to find how many epic anime out there.
epic story doesn't mean it is good or bad story. it doesn't matter. so anything will do.

epic anime:
Legend of galactic heroes
One piece
full metal alchemist
hxh
monster
Gundam Universal Century

i dont know:
slayers : didnt watch it
12 kingdoms: haven't seen it in years. so idk
ghost in shell (movies and anime)
texnolyze
NGE : more than enough characters are fleshed out. but not sure about the world building. debatable.

nope:
hamtaro
dragon ball z: not enough fleshed out characters.
mushishi
berserk: so far three or four characters are fleshed out decently, not enough. the world building is lacking a bit. maybe in the manga everything is better, but we talking about anime here.
lain

here is my understanding of an epic story:

there are multiple plot lines . there are more than enough characters that are fleshed out throughout the story (more than 5). the story is complex. the world building is decent and feels alive.

Best bet would be Fate/Zero and/or Fate/ stay night UBW

Kokoro Connect and Ano Hana are good mentions as well but they aren't shounen action shows so idk if you'd consider them(based off of the ones you know)

When I saw the word "epic" I immediately thought of TTGL lol
When I saw your definition of an epic, I immediately thought of Monster
Don't remember it extremely well but maybe Soul Eater would work too?

Fate series (except Apocrypha, not much improvement yet)
My personal favorite is cyber formula, only if you like the genre, plus the art improved in OVAs
Life isn't as fun and easy as anime.
Watch anime to bring that fun!!

2nd Fate/Zero especially and if you enjoy that, then continue to Unlimited Blade Works but be sure that it is the Ufotable version & not studio Deen.

I think you're being too demanding, I mean there aren't that many anime that fit all of your requirements at the same time.... F/0 could be one but I've just seen it and to me it didn't feel as epic (in terms of greatness, of magnanimity) as it could have been...

Multiple plot lines? Many, many characters? Unnecessarily complex story? Naruto is what you've been looking for.

It's only at the top because it starts with "A" and the list is alphabetical. Anyhow, whatever you may say about it, the show fits OP's definition of what he's looking for in the first post.

So you're asking about epics in the literary/genre sense. This is the definition proper:

a long film, book, or other work portraying heroic deeds and adventures or covering an extended period of time.

A lot of battle shounen would arguably fit, but of the ones I'm familiar with One Piece is the the only I'm certain is an epic, and One Piece is the closest I've seen an anime come to the real deal.

I saw someone mention the Crest/Banner of the Stars franchise. It might be one in the novels, but the anime adaptation doesn't stretch along a long enough period of time/contain enough events to count as an epic imo. The series also isn't very vocal on the issue of who's in the moral right, which also makes it iffy since the protagonists don't have that hero-like status. They're still cogs in the machine that is the Abh Empire when the anime ends.

I agree that Monster might fit. It doesn't have the global scope, but it does have the hero going on an adventure to defeat a great evil over a long period of time.

U.C. Gundam definitely fits. Global scope, heroic exploits, long stretches of time, it has all of the qualifications.

I haven't seen enough of it to be 100%, but I'm 90% Monogatari doesn't fit the description.

Akatsuki no Yona might become this if it continues long enough. It has set itself up in such a way that it could definitely become an epic. I wouldn't say it's one quite yet though.

One Punch Man isn't nearly long enough to count as an epic, nor does it have a global scope (or at least not in the anime).

As for new contributions, Sailor Moon probably fits. The story's ultimate scope spans the galaxy for countless years. The hero undergoes great ordeals to destroy mighty evils over a long period of time. All of the checkboxes I can think of line up.

if that's how you see it
you have Code Geass, Fate/zero, Kingdom, FMA, Claymore, etc, in the list, which imo, fit the bill so much better than adnoah zero

My recommendation is Sora wo Kakeru Shoujo. It might not satisfy you with characters fleshed out (there are at least 3 characters with meaningful personality, but I'm not sure how much fleshing out do you need), but plot lines and complexity are there.
It's also pretty epic in scale.

If epic by you means have multiple stories and characters within the main plot then:

Tengen Toppa Gurren Lagann (It has a simple stories but it is well executed)
Versailles no Bara (If you liked LoTGH you might give it a go)
Clannad+Clannad AS (It has many characters and small stories)
Kill la Kill (Has the same structure of Gurren Lagann)
