Yeah Taniguchi has been neglected in the english-speaking world and still is which is why not everything from his is available online. Luckily everyone of his works has been published in german over the last decade or so so I have access to his whole bibliography :>.

As for the space thing, I see things a bit differently I guess. I love LOGH, but everything that makes the anime so great for me could just as well be done in a medieval setting or anything with huge empires clashing so I don't particularly see it as a space show. The setting is extremely interchangeable for a show like that if you ask me.

In general I don't need a space setting to get a feeling of huge scales, and I don't need all my space settings to be like that either. In fact I'm probably more intrigued when there is more of an focus on the emptiness und unkown-ness of space instead of having it densely populated and mostly part of human society already, like in LOGH. I really love adventure and exploring kind of stories and space is just a perfect setting for that kind of stuff. I love the kind of shows where it's just one ship and their crew traveling through space and meeting all kinds of adventures. You know, Outlaw Star, Cowboy Bebop, Firefly etc.. And I don't need realism in these shows, I just need creative stuff, good characters and style. Though I probably like the subtype of realistic space exploration/colonisation a la Space Brothers, Planetes or Moonlight Mile even more. Or The Martian (the book, I didn't like the movie).

Another cool thing about space settings that ties in with my love for those adventurous stories and not needing realism is that I see them almost as a blank slate to do whatever you want, although I guess that is more of a general sci-fi characteristic for me and part of why I love shows like Space Dandy, Rick and Morty or Futurama so much. Realistic space stuff is nice, but treating sci-fi as a sandbox for creativity also has its appeal and not many settings give the creators that much freedom.

So basically I like space stuff the most when it's on either end of the spectrum. Either very realistic, minimal space exploration, no aliens and nothing, just a few humans versus space like in Space Brothers etc..., or just going completely wild and filling the world with funky aliens, weird designs, crazy landscapes, mysterious powers and fabulous adventures like in Space Dandy & co. I feel like the more in the middle ground a show is the more replacable the space setting becomes, although that doesn't mean I like it any less. For political shows like LOGH or Babylon 5 the space setting is usually a very nice bonus and I still love it, but the main selling points tend to be the characters and dialogue and all that stuff, so it could also shine in a more conventional setting.

But based on what you said I think you might enjoy Crest of the Stars a lot. It has the large scale empires of LOGH and a main character dynamic that is pretty reminiscent of Spice and Wolf in case you've seen/liked that show. Definitely kind of a hidden gem.

And sorry for mixing in live-action examples, I've just probably seen more western sci-fi than anime, at least in terms of time spent on it because a lot of them have a ton of seasons with 20+ 40 minute episodes each. So often western shows will be the first that come to mind, but I tried to mostly stick to anime examples since I don't know how familiar you are with american TV ^^.

Regarding Summit of the Gods, yes I do own the volumes in german. I avoid scanlations in general and almost everything I read these days is something I own. Why is it my favorite manga? Well, I generally LOVE Taniguchi and his artstyle as well as his style of writing very subtle narratives, and Summit of the Gods is just his best work imo, the most complete one. It just happens to combine a lot of stuff that I love. Beautiful mountain landscapes in the godlike Taniguchi art, a feeling of adventure and survival inherently tied to extreme mountain climbing, a silent, strong, intelligent and reflective MC and a perfectly constructed narrative that explores interesting themes. It's one of my favorite pieces of literature, period, not just animanga.

Uchuu Kyoudai is another one of my favorites, for similar reasons. I love the characters, they're the perfect mix between being itneresting and unique and not too over the top so they still all feel realistic, but mostly I just love sci-fi and space exploration and the more 'realistic' it is, the better. There's only 3 anime that cater to that as far as I know (Planetes, Moonlight Mile and Uchuu Kyoudai) while most anime sci-fi is very far removed from our current reality, so these 3 shows will always have a special place in my heart. And while Planetes is just as good or maybe even better in some regards, Uchuu Kyoudai was the longest one that I watched for the whole 2 years of it airing, so it just left the biggest impression. Also the manga is still ongoing so that helps not getting too frustrated with the way the anime ends, which is basically in the middle of an exciting new arc (or more like right at the start of it).
Not sure what makes drama 'pointless' to you, but there will be some drama in the show. Personally I loved every bit of it tho.

As for pre-2000 recs that don't require too much thinking, there's a lot that comes to mind. I always have a hard time narrowing it down when it's not a very specific request for one particular genre (and even then sometimes xD). I've just seen and loved too much to have an easy time giving short and concise recs :>.
But I'll try:

One of my favorite oldschool comedies is Great Teacher Onizuka. It's hilarious and mostly lighthearted, but it does have some drama in the style of a dramedy, but it never dwells on it for too long.

If you like episodic stuff with great MCs and a lots of variety in the individual stories (think something like Mushishi without the supernatural aspect) then I absolutely recommend Master Keaton, one of my favorites. I really love well done episodic shows because they provide me with dozens of fantastic stories instead of just one, so I value the best episodic shows really highly and Master Keaton might be the best of the bunch.

If you're up for some funky space adventures with a bunch of machismo sprinkled on and a fantastic jazz soundtrack, then I recommend Space Cobra. Easily one of the most stylish anime out there, and perfect if you love space adventures as much as I do.

If you enjoy mecha and slice of life (a somewhat unusual combination in today's anime landscape) then I heartily recommend the Patlabor franchise. The movies are by Mamoru Oshii so they are on the 'deeper' side and might require a bunch of thinking, but the OVAs and TV Series are just lighthearted slice of life of the Patlabor unit, which is basically police with mechas. It's about the daily lives of the people working there and while that might not sound too exciting, I found it very entertaining and easy to watch. But you need to be down with slice of life and episodic stuff in general to appreciate that show, and I know many people aren't.

If you're willling to go even older I'll recommend you two of my favorite 70s shows in Akage no Anne and Ie Naki Ko. Both adapt western masterpieces of literature and both have fantastic background art that is more colorful and memorable than almost any other background art from the 70s and 80s. Both are stories that don't really have one specific target demographic, they're great for all ages even when the main characters are kids. Both are emotional rollercoasters, especially Ie Naki Ko is probably the single anime with the highest highs and lowest lows in terms of emotional response to it. Akage no Anne is more lighthearted and slice-of-lifey, with a mostly static setting and the MC carries the show to some degree with her fabulous personality. It's just a blast to watch her. Ie Naki Ko on the other hand is more adventurous, they're constantly traveling through europe and meeting new people, and as I mentioned some eps can hit you really hard while others will lift you sky high. So yeah, not sure what sounds more appealing to you, a slice of life with a fantastic MC or an adventure with tons of feels.

If you want something short and sweet with some fanservice and comedy, Golden Boy is the pick. But if I start including OVAs and Movies in my recs now, I'll never finish this post. So for now I'll leave it at those TV Series I mentioned, two per decade. Let me know if you had anything more specific in mind tho.
