Ah, first impression almost decides everything.

Hayate the Combat Butler - Random hilarity and Hayate's fate. Also, random comments from Narrator.
NHK ni Youkoso! - Psychologically funny.
Higurashi no Naku Koro ni - yay for killer lolis.
Zero no Tsukaima - Louise <3
Death Note - Definitely something that would hook people in the first few episodes.
Shigofumi - Surprising conclusion at end of episode. I hope this anime's gonna be good to the end.

a lot of anime catches my interest at first, if it doesnt i usually dont watch it, or i end up dropping it / putitng on hold at some point. i guess i'll pick the most enticing ones from first episodes.

Ookiku Furikabutte, honey and clover, ouran host club, fullmetal alchemist, nodame cantabile, ef tale of memories, bokura ga ita, peach girl, hana yori dango, marmalade boy

and for the ones that started of SO well, like i was really hyped to watch them, but ended up having a terrible ending: Kamikaze Kaitou Jeanne, Kare Kano, Romeo x Juliet

i guess a lot of shoujo / romance stuff gets me at first because i want to see what happens next by the end of the first episode :P shounen shows tend to grow on me as i watch them.

NHK ni Youkoso! and Sayonara Zetsubou Sensei - reality is funny and twisted
Monster - psychologically entertaining
NANA - music, no lame romance, seeing yourself in the characters
Kyo Kara Maoh! - hard to explain ^^ light and funny, I think
I'll be nicer if you give me chocolate and bishies ^^

Hmm, for me, Haruhi had a really strong first episode, I was basically into that series by the end of Kyon's opening monologue, and the rest of the episode just got better. Season one of Gunslinger Girls also had a pretty solid first episode. They were actually able to pack a lot of action and explanations into that. And for one more, Cowboy Bebop. That was a great series from beginning to end, instantly got my attention.

Haruhi's first episode was awesome, for sure.
Jigoku Shoujo also grabbed me in the first episode, but I eventually dropped it by episode 12 or so.
Others would be Hitohira, Shigofumi, Mushishi, and Genshiken.

I have to say I'm absolutley shocked that no one has said Elfen Lied yet. That show grabs you by the jugular from the word "go"!

Baccano!, Giant Robo, and Read or Die. Most other series drew me in gradually, by degrees. These three grabbed me by the sleeve and hooked me.

Fullmetal Alchemist had such a good start
the first episode was fast and had action and comedy
and the ending scene was when ed pulled off his shirt to reveal his metal arm and the audience cant help but go O_O!!!!!
and then watch the rest.

Full Metal Alchemist - It's FMA...it doesn't need to be explained =O
Kanon - The beautiful animation struck me hard as this was the first KyoAni show I watched.
Lucky Star - I don't give a crap, I found a six minute talk about food interesting and cute =P
Sayonara Zetsubou Sensei - The complete randomness and chaos got me hard
Higurashi no Naku Koro ni - Spoilers if I explain
Shakugan no Shana - Not what I was expecting, the excellent bgm and action scene in the beginning got me.
Gakuen Utopia Manabi Straight - Lolis galore

The ultimate anime that did this to me was The Twelve Kingdoms. After the first episode, I just had to see what was going to happen. It was then that I found I couldn't stop watching. More recently, I marathoned all of Denno Coil. That was awesome. I had never done that with a series before. I would also say Elfen Lied, Monster, GTO . . . Last EXILE as well, with its movie like atmosphere and animation.

Oh and how could I forget my favorite, Mushishi

I think pretty much all of Death Note had been grabbed in til the end, the episodes always ended leaving you want to know what happens in the next episode. Claymore, some the scenes in it kept me on the edge of my seat, and the animation was good.

Never thought much about this before, but I'd say:
Death Note ~ Fairly new to anime, but the idea was interesting and the action (or dramatic atmosphere) they managed to create really did pull me in.
Shigofumi ~ A dark atmosphere with a plot that just rocked my socks, and evident in the first episode too!

InuYasha ~ Still new to anime, but I was extremely intrigued by an actualy storyline and the fantasy setting, rather than the sitcoms and dramas I was used to.
Mai Hime ~ First subbed anime watched, but not only that Mikoto's sword was amazing.
Neon Genesis Evangellion ~ Misato's attitude! That's the only reason, really :p

Some other short series would naturally have a good first 20 minutes that really pulls you in, FLCL, I''s Pure, 5 Centimeters per Second

Gotta second that. Elfen Lied was one of the most attention grabbing series I've ever seen. Higurashi, too, for similar reasons. Very bloody opening scenes. ^^;

Hmm a few animes that quickly caught my attention were GTO, Death Note, FMA, and Fate/stay night. I think Shakugan no Shana beat them all, however, because the first OP was so good that I was hooked even before the episode started lol. Hishoku no sora + Yuuji and Shana hugging = win. ^^

A lot of them did, like Bleach, Naruto, Saiyuki, Gintama, Full Metal Alchemist, Gravitation, and my list goes on.

But the latest for me would be Brave Story. It's just beautiful that I can watch it over and over again. =^.^=

Berserk caught my eye immediately and drew me in episode after episode till the end, at which I screamed about how they ended the anime.

That and Cowboy Bebop pulled me in.

The only recent example I can think of is Baccano. I would've watched it all in one sitting, which I almost never feel the urge to do, if it wasn't for other class/work and so on.

^Same goes for me with a different anime. A recent one, actually. Mushi-Shi. It was a sort of anime that I had to watch without any distractions like the computer. I really wanted to pay attention to the whole thing, which doesn't happen to me a lot. Except with an exception of FullMetal Alchemist, I think Mushi-Shi is the only one I really watched with no distractions. ^^ I really recommend it to others.
