I like to photograph and love anime and starting to get back into it, started with spring 2016, and working from summer forward to see what comes out, and when I have time go through backlog of older good stuff.

just wanted to ask if the saint seiya that you watched is 'knights of the zodiac' ((because I see that on the Netflix catalog and I really enjoyed watching Lost Canvas))

Man how many memories i have of that show: it has a rough start but you should have arrived at the Sanctuary arc, the second best arc of the entire series imo

So for your question.
I would say the latest thing should be Benizakura Arc, so Episode 58-61.
It will improve earlier, but this should be the biggest kick. Even if you already got many hints about the Story already.
During this Arc, you got much more hints. And more seriousness.

Honestly the best you could do is play the original VN first, but it's a mess to get working depending on your computer and a sizable time commitment so it's a tricky choice.
On the other hand, the only real non-VN starting point is Dean Stay/night. It's a poor adaptation of the "Fate" route from the VN but it's the only alternate to the VN right now and it's the real starting point of the story. Everything else either spoils it or otherwise assumes you've already experienced it. After that you could watch anything besides Fate/Zero, but you'll probably get more out of finishing the VN routes first.
After that, the other two VN routes (UBW, followed by Heaven's Feel) are preferable next choices (Heaven's Feel's movie adaptations aren't quite done yet but are being worked on). Don't watch the UBW movie, it's way too short for it's own good.
Fate/Zero is really good on it's own but you shouldn't watch it until after Heaven's Feel because it has huge spoilers for the entire VN. I say this after learning that the hard way.
I don't claim to be the biggest Fate fan but that's probably the least spoilery way you could take things.
