I'm often satisfied after one re-watch (then I can wait for a couple of years), but Kaleido Star is one I can see mysellf re-watching many more times without getting bored. There's just something about it :)

I could watch Fruits Basket over and over and never get bored of it. That said, I won't re-watch it unless I really have nothing else to watch or want a trip down memory lane.

The people that are making board jokes are trying way too hard to be funny.

But you know it was bound to happen. How could the people here possibly resist the temptation? I'll add my part. I wish there was an anime about boards. It could be a slice of life set in a sawmill, and we could watch boards being made in glorious full color animation. (There is an anime about bread, so why not boards?)

And now to actually answer the original poster's question.

There are two broad categories of series (anime and, for that matter, other television and radio programs) that I can watch again and again without getting bored.

The first category includes all manner of complex, multilayered series. It seems that I can watch these series multiple times, and each time, I will find something new. They can be humorous ones such as Excel Saga and Sayonara Zetsubou Sensei, or they can be serious ones with rich characterization, such as Maria-sama ga Miteru.

The second category includes series with not necessarily complex comedy that is fun to watch over and over again. Yuru Yuri does this for me; the type of comedy that it features suits my taste well, and I don't get tired of it.
It is pitch black. You are likely to be eaten by a grue.

There's a tonne of animes with rewatch value for me. Usually I pick and choose between episodes. However animes that I've re-watched in their entirety, or near entirety are.

FMA:B
Minami-ke / Tadaima (the joy of light comedies like this is after a year or two the jokes aren't fresh in your mind so you can actually revisit them I find and enjoy them to almost the same degree as you did the first time).
Baka to Test both seasons
seitokai no ichizon season 1
School Rumble both seasons
Hayate!! (season 2)
I thought I wouldn't be able to re-watch clannad but I enjoyed that as well so I'm going to guess I could watch Kanon 2006 too.

After that I usually pick and choose really special moments of episodes that I thought were epic/touching/awesome in various ways.

Kill la Kill - certain episodes & fights
Naruto - certain moments or battles from certain arcs like Hidan/Kakazu fight or even as far back as Naruto/Kakashi/Sasuke vs Zabuza the end to that was really awesome
Magi S2 - best moments from season 2

For an example of touching
Kimi no Todoke - Episode where confrontation in the bathroom. Was really sweet and touching.
Clannad AS - Not spoiling but I think people know the two most beautiful moments from this show
A guide to living with that one guys ugly signature on MAL.

1. See that SullyNathan has posted last in thread, abort thread.
2. After clicking quick reply, close eyes and type out reply.
3. Try to scroll as far down as possible before replying if you prefer to keep your eyes open.
4. Report said signature for being offensive to the eyes.
5. See he is active in thread, scroll through thread while trying not to have eyes burned, sigh, click back & lose interest.
6. Move to another part of MAL forums where he does not visit.
MAL Jesus where are you?

Hunter x Hunter (1999) + the first OVA. I've watched it a total of 3 times so far.
Possibly Bakuman 1 and Death Note too.
I want to say Dragon Ball and Dragon Ball Z too, but it probably won't count because I'd skip the filler episodes on rewatches.

Nothing. There are so many good anime I don't bother watching things I already know. My sister though watched Shingeki no Kyojin like 4 times and I couldn't resist but watch it all with her. Did the same thing with Death Note. And with DBZ, but when I was younger. It was my absolute favourite at the time, and I watched it 3 times, even though it lasted over 280 episodes.
