While true, my primary fascination with the rebuilds is the meta commentary found throughout: they explore various facets of Evangelion as a zeitgeist phenomenon, extrapolating upon what End of Eva meant for the previous generation and what Eva has become now - but also what it should become. Eva 3.0+1.0 is one big "guys, Eva is a fictional world, and it's time to leave that world and return to reality, carrying the lessons learned throughout and growing up. You can do it!"

In Japan, the Yamato reboot is actually only getting bigger and bigger in terms of sales and recognition. And as much as some Star Blazers fans in the US bitch and moan about "changes," most of said changes originate from original production drafts, original elements to account for changing times; most of which are broadly accepted by the same Yamato fans of old that have carried the franchise for almost 50 years.

Die Neue These is a bit more niché, but that's because the original LoGH was niché to begin with. I do have some issues with how DNT diminishes some of the later story progressions by omitting necessary details that better inform the audience on how monumentous certain future developments are, but I'm mostly happy that it exists at all!
