I read a lot of philosophy and literature which changes my worldview and subsequently my taste in anime, and art in general.
I change my scores with my changes in thinking throughout life. Think of my scores as a snapshot in taste at the time I scored it. I may think differently about a show now than when I scored it.
I believe, perhaps falsely, although the lack of any coherent explanation by the people I've seen makes me believe this is true, that most people on this site don't understand what they mean when they say good art or good writing, and in actuality are just saying "I like this so it's good," but dress it up in words to legitimize their taste. There's nothing wrong with just liking something for no discernable reason, but it seems like a lot of people have forgotten that.
Everyone is acculturated differently, so art will affect everyone differently. The purpose in critique should be to explain what it means to you and what the creator did (or didn't do) to make you feel that way. Then we at least create a better picture of what anime/manga creators must do to create a certain feeling in their audiences.
Yes, the habit makes it questionable whether people are aware of why they do something
I think it's possible that many participate in cultural activities without knowing about it. For example, not everyone is aware of the reasons behind Christmas trees and Easter eggs
True, those European countries have their ethnic lines, though it seems to have been working better for the UK than for other countries except for the Ireland stuff

As for old school recommendations, well, it all depends on what genres you like the most. If you like magic and comedy, then I highly recommend "Akazukin Chacha."
If you're into sci-fi adventure, then "Uchuusen Sagittarius" is a great one. It's a bit long, but once you get about a quarter of the way through, it becomes even more interesting. It's probably the most underrated anime out there, as people see the character designs, and don't even think it's anime, lol.
Another great adventure anime is "Mirai Shounen Conan." That one's not too long, and it's the sort of anime that everyone can enjoy.
If you like cyberpunk, then the original 1987 "Bubblegum Crisis" OVA is where it's at.
