The Mushishi OP, as well as its entire soundtrack.

The ending themes for Kino's Journey and Natsume Yuujinchou also come to mind.

I'll throw in Fruits Basket OP as well. That was a nice, quiet song.

I don't know what it's called, but one of the songs from Welcome to the NHK... It's so soothing/depressing to listen to when you're walking outside at night, all alone and smoking a cigarette. Makes you feel like Satou ;_;

Dango Daikazoku thats a good one. the one in the movie though just makes you happy lol.

I got two from the same anime.

There's two versions, I'm of course speaking of the acoustic version.
Song Title: Moon on the Water

If you read the lyrics it's quite depressing and even though it dose have electric guitar in it that doesn't mean it's not soothing.
Song Title: Slip out.
Anime: BECK MCS

Listen both English and Japanese and they're both quite soothing.

Of course this is all in my opinion.

LOL You took mine! But I have to agree -- when I saw this thread, this song came to mind first, so I'm linking to it just because I can. I've linked to the Beat Crusader version, only because I find the vocalist's voice, well, more consistent ^^;;



And I have this massive soft spot for instrumentals. Joe Hisaishi (known for his work in Miyazaki's movies) is one of my favourite composers. Out of all the stuff he's composed, though, one of my favourites is "The Sixth Station", not only because the piece itself is memorable but because the scene in the film is just as calming and beautiful.
