I've started with Shounen when I was young (Naruto,One piece,HxH,Ass classroom,FMA and etc) then I've begin to read/watch more "mature" action adventure and horror anime/manga (Berserk,Claymore,Akira,Blame,SE Lain.), After that I started to experience more with underrated anime's and different genres like Rom-coms something that I didn't really enjoy that much so I came back to action. I caught up with Naruto and one piece and started to mostly Like battle Shounen and action in general again. I came back full circle in like 3-4 years which is kinda weird ngl.

For me, I used to be an all ecchi, harem and romance lover but over the course of a few years I have found so many good animes in different genres that now I like a little of everything. Despite saying that, I am a wimp and don't watch much drama but other than that everything is good.

I don't watch shounen almost at all, I have a growing liking for everything youkai and I tend to watch more ecchi than I thought I would (not saying much either way).

My taste has underwent a full cycle, where as for now I very much enjoy raffle entertainment. And I'd like to think I'm more self-aware. By that I mean I now know my taste is shit, and I'd admit to liking things that aren't 'elite' enough. Damn I hate my former self, who'd coerce own-self to like things that are more or less 'elite'. What a fucking obnoxious supercilious retarded snob I was.

Early would be ecchi, harem and school stuff pretty much exclusively. The latter especially - I practically would only watch something if it was set in a school.

Anything after early watching habits from the first few months is just a strong slant favoring harem&ecchi and being open to anything else.

I shifted more to reading manga for any genre. As for tastes, a good ecchi/harem can be better than a bad adult series by madhouse or production ig, so I don't mind watching/reading anything

long story short: I used to despise Slice of Lifes, but now I enjoy them.

I found my taste in anime changing when Bleach/Naruto ended and I started reading/watching harem/ecchi romcoms like Rosario + Vampire and To-Love-Ru. I didn't get back into the shounen battle anime until I started watching HunterxHunter and My Hero Academia. I also been watching a lot of slice of life series now that I'm a little bit older.

Now a days I watch Isekai, Romcoms, Harem/Ecchi, and Slice Of Life series. I still watch other Shounen series like Attack On Titan, JoJo, and My Hero Academia.

I'm harder to impress, thats about it.

I see newer fans lose their minds over shows that i'm like "been there, done that"
but thats growing old for ya i guess

First it was kid's anime like Doraemon, Digimon, Pokemon,... along with popular shounens like Dragon Ball, Yugi-oh,...

Then in my teenage years, it was ecchi and dark/edgy shows like To love ru, Seikiren, Schoolday, Guilty Crown,...

Then I found my love for slice of life, I started to watch more mature shows like : Barakamon, Aria, Usagi Drop, Hidamari Sketch,... Along with a lot of shows from mystery gerne like Monster, FMA, Goblin Box, Detective Conan, The town without me...

And then I fell in love with space opera,... Terra e, Yamato 2199, Macross to name a few,... Now I'm fine with what ever I watch as long as its story is good

Why do recycled threads not get criticized, but my threads do?

To answer the question, I think I used to like more...fast paced anime, let's say. So stuff like Monster, weren't to my taste. But as I grew older, I think I began to love slower paced anime more.

I started anime as a very pure pre-teen. And by pure, I mean I was deeply traumatized after watching the first 4 episodes of Elfen Lied which was trending at the time. Gulp.

Horror animes were a big no-no. I liked Naruto for it's 'funny' scenes but was bored watching all the fights. Ecchi and, god forbid, hentai, were disgusting. I freaking LOVED high school settings.

Fast forward 10+ years and I'm in my mid 20s.

Hentai is not my cup of tea, I prefer actual porn. But it doesn't disgust me - it makes me laugh.
High school settings make me cringe. Like...No.
The horror genre is among my favorite. Not Elfen Lied type of 'horror' though. Actual shit that gets under your skin. Couldn't care less for flying limbs and guts.
Rewatching Naruto atm. Not funny, fight scenes are actually being appreciated much more than when I was a tween.
Ecchi? Er, I don't give a shit. I prefer it gone, because, as most mentioned, fan service makes me roll eyes.

I started by just watching one of two genres and than just started adding more and more until I'll watch just about anything now regardless of demographic.

My tastes have remained more or less the same. I'm less tolerant of some tropes, though.

I'm still new new new to anime so I'm not sure if my taste has evolved that much. I guess I've become slightly more tricky to impress in terms of anime comedy. Never was a huge fan of romcoms, and I'd say I still don't like them that much but I'm getting better about giving them an honest try. I've also started caring a lot more about sound design in anime.

I grew up with shounen and quickly transfered to Slice of Life and Ecchi shows with Loli characters. Then I got suddenly convinced to watch psychological anime with strong characters and here we are at Seinen/Psychological/Military/Gore.

Used to watch a lot more dumb shit in general, I started watching anime at 14 and my favorite anime back then were Fairy Tail, Valvrave, and SAO. I had a passing interest in mecha but avoided essentials like Gundam cuz kids I was friends with told me it was "old, boring, and bad." Generally I watched shows that were trending, ecchi harems, some mecha, and I avoided anything old.

Nowadays, mecha is my absolute favorite, I've been watching a lot of 80s and 90s anime, Gundam is one of my favorite franchises, and I don't really watch ecchi stuff unless I need something dumb to balance out when I'm watching too much serious stuff at a time. Some of those harem comedies are still a bit of a guilty pleasure for me tho, I'll admit that.

Very little honestly. I watch a little less slice of life than I used to I guess, but other than that I'm willing to try pretty much anything.
