I would say mochi, but I don't consider it Japanese, since mashed soft rice cakes to me is something Chinese that was spread throughout asia.

Milk is not necessary, I tried making one without milk and it's still decent

Soft omurice taste better imo than the wrapped ones where you put your name with ketchup

Japanese curry is piss easy. Just buy a block of that stuff what looks like chocolate, you can get it anywhere now.

I've made my own sushi. Nothing complex, but tasty enough. I've made Yoshinoya like beef bowl, tonkatsu, a few teriyaki and rice dishes. Lots of udon and soba noodle soups. I've tried making tempura with acceptable albeit messy results. I've done shabu-shabu, with some help mind, for a party. I would like to give okonomiyaki a try some time. I always enjoy it when I buy it from market stalls / fetes / fair days.

I have got some good recipes I want to try from

https://www.youtube.com/user/cookingwithdog also. Seems to be a popular channel

Yeah, but I forgot the name. It's like made with crushed boiled beans, can't remember the ingredients anymore because I made it way back in high school. I was reading this manga "Kagetora" and the main guy there likes that food so I thought of making it. I still have the photo of it somewhere in my laptop, it's a Japanese sweet.

Japanese food looks so tasty when I read it in manga and stuff but in real life I'm not much a fan except sushi. I bought a bento box Japanese cookbook and tried these black bean patties and they tasted horrible. I consider myself an average cook but most of the Japanese food I've tried tasted bland. I do like very flavorful food though.

Karaage, katsudon, miso salmon, teriyaki chicken/fish/beef, omurice, sakura mochi, ramen from scratch (preparing the stock is like half a day's worth of time), curry, nikuman... The list goes on. I like a lot of Japanese food, tend to take inspiration from the endless amount of cooking videos I watch T o T

That was the was the most annoying thing whenever I looked up recipes in grad school. I couldn't get my hands on the ingredients for dashi where I lived.

I have made tonkatsu and hamburg steak with home made tonkatsu sauce and home made ponzu, they were pretty good but also kinda tedious. I'd try it again now as I have access to more kitchen ware and prep space which really helps.

This is why Cantonese cooking is great.

Just steam everything. Lightly season... and steam. Boom, done. Fish, chicken, eggs...

And everything else you just toss in a wok.

Tried to cook cream stew when I first saw it from FMA:B. It just looked so good I had to try it. I can't find the roux box for a cream stew in a nearby supermarket so I tried making one myself, it was easy (butter, milk, and flour) and the stew turned out good but cleaning the separate pan I used for making the roux afterwards was annoying so I looked for the roux thingy in a different supermarket. Good thing I found one. I made a huge batch so I kinda used all of the roux squares in 1 box (8 square pieces, as far as I remember). The taste turned out different from my first try (probably because of the dashi flavor added in the roux, not sure tho). To be honest, I prefer the first batch that I made but it was troublesome to make and I really hate cleaning up afterwards. I still liked the second batch because it tasted Japanese-y.

Anyway, I used chicken breasts and thighs (much better if they're deboned and cut into bite-size pieces, albeit larger), carrots, potatoes, onion, and broccoli. That's basically it. If you want to make your own roux just use flour, milk, and butter. There are recipes online on how to make it and I don't want to elaborate because I'm not good at explaining stuff. You can also add canned/sweet corn if you like.

I don't have any photos of it since I'm not the type of person who takes pictures of food I make or about to eat.

My friend and I also tried making okonomiyaki once. It turned out horrible because we didn't have dashi stock, we instead used shrimp stock and it tasted really bad.

There's still a lot of dishes that don't have fish in them. Rice is pretty much a staple, though... Maybe Nikujaga? Pretty much meat, potatoes and vegetables. :P

My chicken teriyaki recipe (I don't do measurements):

I mix corn starch and some oil in a bowl, then add in 1 egg white and honey, and mix the mixture together. I put the chicken thighs in. This makes the chicken extremely tender when cooked (but take care not to overcook the chicken).

For the sauce, I put in ginger and garlic in a mixture of soy sauce, mirin, sugar and water.

You need a cornstarch mixture for the sauce. Put in a few drops of water into like a tablespoon of cornstarch. Mix it, and put more water if necessary, until you get a cornstarch paste.

I put peanut oil on the pan at the highest heat possible. I put the chicken thighs on, cook around 3.5 minutes on one side, turn it over and cook 2.5 minutes on the other side. Then the chicken is done. I put in the sauce and it will start simmering immediately. Let it simmer for around 15 seconds, and then put in the cornstarch mixture and stir immediately, removing from heat. The dish is done.

This chicken teriyaki will be the same quality, if not better, than the teriyaki you eat at the best restaurants.

Garlic sauce and tomato paste is a viable substitute btw. Though yeah, pretty much the ketchup is a known ingredient of omelette rice

Considering the Japanese are in freaking love with their mayo, I'd say that works too as a substitute for the ketchup on top of the omelette.

I concur. Actually one time to add fluff to an oyakodon I was making, I put some mayo within the egg. The resulting egg baste on top of the rice came out creamy and fluffy. And yes the mayo "filling" technique works on regular scrambled eggs as well
