In need of an anime that is realistic, has mature characters, a good story and OST

What I am looking for is broad and not specific, I am sorry lol

To give some examples; Ping Pong the Animation, Hikaru no Go, Gyakkyou Burai Kaiji: Ultimate Survivor and Shoubushi Densetsu Tetsuya.

These animes are about game or sport, but they are realistic (apart from Hikaru no Go). What made them so great for me were there character development and addiction factor (perhaps because the theme was Game or the story line is so good, that the game is just apart of it?).

I am not a big fan of childish supernatural animes. Just throwing that out there.

I'm going to have to second both of these. They both have amazing OST's and character development, and would recommend them to anyone regardless of genre.

I would also include chihayafuru, as though I admittedly do not watch many sports anime, for some reason seeing people slap a bunch of cards is invigorating. Favorite "sports" anime by far (characters are not mature but they're not horrible either. I actually quite liked it).

In terms of characters that actually seem like people, you could try studio ghibli movies (my favorites are spirited away, mononoke hime, and when marnie was there). They seem pretty childish as they're usually g-rated movies, but older people can definitely enjoy them.

Finally, if you're willing to get through a slightly boring experience without an overarching plot in exchange for poignant ministories, you should try natsume yuujinchou and mushishi. Of those, natsume is more like a standard anime but with an actually likeable male protagonist, while mushishi feels like watching emotional japanese folk tales.

Well, that's a lot to ask. Probably my recommendation could help.
1) Cross Game
2) Rainbow: Nisha Rokubou no Shichinin
3) Space Brother
4) Kids on The Slope
5) Gin no Saji
6) Sangatsu no Lion

Those above could match criteria since 5 out of 6 aren't shounen anime except Cross Game, but the characters are mature as well (for me), all have gooooood OST and ofc great realistic story.

basically, Shinichiro Watanabe stuff. He's the guy that created Cowboy Bebop and a favorite for the "I want to watch anime but not that gay moe or childish shounen stuff cause I only watch HARDCORE PHILOSOPHICAL SEINEN because I'm still COOL and not a weeb" types

Just look him up on MAL and start from there.

Kaiji with that exaggerated character emotions and reactions is far from realistic. The games sure are enjoyable. But calling the show realistic is a stretch.

Elaborate on realistic. Does it have to be about the real world and human things like most sports anime and RomComs? Or can it be slice of life + different elements. Like Mushishi is pretty realistic, Hinatmatsuri too, but it has supernatural and such

High Score Girl has the best ost of 2018 IMO, realistic, the only pitfall is that MC's are in elementary school, one is kinda immature but the other one is really well reserved.
Kids on a slope is a music anime, so you know the soundtrack gotta be pretty dope. Mature characters and realistic.
Tokyo Godfathers fits the bill, I forgot the OST though, but it's an incredible Satoshi Kon movie

Run with the Wind is great, and I really liked silver spoon, which is about this agricultural student doing all kinds of stuff. It was really chill. I don't remember how the songs go.
Barakamon was pretty good, too. The op song was so good that i memorized all the lyrics

im not even sure whether these had character development, but i just remember that i liked them a lot cus of how chill it was

I am not sure I even described what I wanted properly lol After finishing Hikaru no Go, I needed an anime along the same character development and seriousness. 11 episodes into Cross Game and I am enjoying it.

I am not good at describing things, but after watching Hikaru no Go, I realised I enjoy animes like Ping Pong the Animation, Monster, Gyakkyou Burai Kaiji Ultimate Survivor. Stories that can actually happen in real life with realistic characters, but with a great story to tell. I think maybe my comment about mature characters was based on watching Akira Toya. And the fact I don't like animes like Chuunibyou demo Koi ga Shitai!.
