I recently watched Sonny Boy, and it had an Indian character named 'Rajdhani'. What's funny is that Rajdhani means 'capital' in Hindi (as in capital of a country or state) and no one in their right mind would name their kids that.

India was referenced a few times in Code Geass and Neon Genesis Evangelion as a producer of mechs and stuff.

Chitanda's uncle from Hyouka was reported to be missing in India.

As far as I remember, only 2 anime/manga come to my mind.

1. Record of Ragnarok has a major supporting character called Shiva who's an Indian god of destruction and happens to be 5th contender representing the gods in Ragnarok.

2. Shakunetsu Kabaddi. Well, there aren't any characters, in particular, the sport itself originates from South Asia, particularly a southern state in India.

Also, I've heard that Jojo's has some Indian characters.

In JoJo Part 1, Zepelli talked about learning about "improving his breathing" and ultimately about hamon from a doctor when he was in India

Also, in Part 3, the Stardust crusaders are shown at the Howrah bridge, which is in the region of Bengal in India.

And in Hyouka, iirc, the main character's sister, in the first episode, sends him a letter from Benaras, India.

Akage no Anne (Anne of green gables) they even made a prequel anime Before Green Gables. Japan loves redheads..
Besides that I don't remember Canada being in too many anime except the odd character like Maya Walker from Puraore! (hockey anime is mandatory watching for Canadians)

I haven’t seen many references of Mexico in anime, however one that I have seen as of late is in the second season of Let's Make a Mug Too where the main characters meet a girl named Ximena from Mexico

there are tons of references for the USA; one only has to look as far as, say, Great Pretender.

I haven't found too many references to Vietnam, but I did find that one Viet girl in Monster. And I've heard there's a Viet man in LoGH.

From the anime I've watched so far, 90% of the scenes that take place in the USA are either:
- New York City
- the southwest, such as Arizona or Nevada.
New York is such an iconic city that of course it's going to show up in anime now and then.
As for the southwest, I think the reason for that is that it's the region most unlike anywhere in Japan. Most of the rest of the USA has climate, terrain, and vegetation that is at least somewhat similar to somewhere in Japan, whereas the wide open deserts of Arizona with cactus and rock formations are unlike any part of Japan, making them a more attractive setting for creators of Japanese media.

In 3rd ep. of Hibike! Euphonium is music from Antonín Dvořák called From the New World which he composed in USA, but he was born in Czech Republic (near my city lol) and died in Prague (capital city of CZE) so when I heard it for the first time, I was shocked and happy in same time.

One Piece episode 914 & 915 & 1027 were a mistake and 957 brought the salvation - FMmatron

I watched some episodes of Blood+. A character mentions Nicaragua as well.

There are tons of references to the US in anime. Maybe the most famous/obvious is the character Funny Valentine from JoJo Part 7, who is the President of the United States.

they called it Alimango Island i was suprised when I first watch Fate/Zero Its Emiya Kiritsugu hometown pretty surprised when Philippines was in anime beside Pampanga Philippines in Charlotte anime.
