Anime set in aforementioned time periods. Some of them are technically not historical but have the vibes.
Only from what I have already watched, so sorry for a small number.
(Possibly mild spoilers)
Gosick
TV, 2011, 24 eps Me:- Author:10
Mystery drama set in Sauville, francophone Ruritania in southern France, in the year 1924. Show features characters solving urban legends (fictional, but based on famous European urban legends of the time), real life nazi occultism, political intrigues (mostly behind the scene), rise to power of local fascist party, alternative WW2 and a love story (not special, but I liked it). I am definitely biased, but I think that all of the themes and plot points are handled with style. Also, op and eds are great and I love Victorique's dresses.
Kuroshitsuji
TV, 2008, 24 eps Me:- Author:8
Anime about demons, reapers, ghosts, angels and other heroes and villains of Victorian British Empire. Historical material is used mostly for aesthetical purposes, but it is fun, so who cares. Second ending is wonderful, listen to it even if you don't plan to watch anime.
Kuroshitsuji: Book of Circus

Arc dedicated to circus. And I do love how it presents circus aesthetic, character design here is best in the entire series imho, music is great and memorable, especially opening. Also, this arc and onwards are completely based on manga.

Classical English murder mystery, but with demons. Featuring Arthur Conan Doyle himself, references to some popular literary works of the time (as well as Looney Tunes), and Sebastian saving the day once again.
Kuroshitsuji Movie: Book of the Atlantic

Zombies on Titanic because somebody tried to reanimate corpses using galvanism. And Even Elizabeth is more skilled than Ciel.
Princess Principal
TV, 2017, 12 eps Me:- Author:10
Steampunk spy drama set in 1901 in an alternative world where, among other things, British Empire got separated into two countries, The Republic and The Monarchy. Here we have cute and interesting characters, action, thriller, political intrigues, wonderful opening and ending themes, Girls Love and much more. I am definitely heavily biased because this whole franchise is very me.

Dantalian no Shoka

Story about ex-military pilot and library demon gathering magical books in post WW1 England. Lots of different mystical occurrences in the spirit of the time. Not particularly remarkable but interesting anime.

Basically just one additional episode, and not the best one.
Vanitas no Karte

Alternative history set in the world where vampires (who are more like fairy folk here) kind of coexist with humans. Characters are lovely, Vanitas is a a magnificent jerk, Noé and Jeanne are cute, Dominique is magnificent and cool, art style is extremely beautiful. Plot references classical vampire stories as well as French urban legends.

Second season, as good as first or even better. Featuring Beast of Gévaudan, Count Saint-Germain (kind of) and others.
Yuukoku no Moriarty
TV, 2020, 11 eps Me:- Author:8
One more reincarnation of Sherlock Holmes stories. Now Moriarty goes against the rule of nobility! Interesting thriller with very strong Code Geass vibes.
Yuukoku no Moriarty Part 2
TV, 2021, 13 eps Me:- Author:8
Second season. Now introducing Cryptohistory, Jack the Ripper, James Bond and stronger Boys Love (under)tones. I haven't read the manga, but people say that while it is still ongoing, the anime covers nearly everything that was published at the moment.
Kimetsu no Yaiba
TV, 2019, 26 eps Me:- Author:8
Anime based on Shounen Jump manga. Story about demon hunters in Taishou Japan (story is set somewhere around 1921 from my calculations). Character design is cool and colourful, music is cool, plot and characters are interesting (not anything special though, imho).

Every Kimetsu no Yaiba arc tries to get even brighter art, even more colourful and beautiful character design and even cooler music than the previous one.
Mars Red
TV, 2021, 13 eps Me:- Author:6
Taishou period, vampires, vampire hunters who are also vampires themselves, and more. Characters and plot points are interesting, but plot itself is kind of meh.
JoJo no Kimyou na Bouken (TV)
TV, 2012, 26 eps Me:- Author:7
Phantom Blood is set in 1889 England, Battle Tendency is set in 1938 in Europe and Americas. Featuring nobility, vampires hungry for blood and power, breathing technique that gives user power of the Sun, ancient and more advanced civilizations, plane crushes, nazi cyborgs, fashion show and other bizarre adventures.
Shadows House
TV, 2021, 13 eps Me:- Author:8
Drama set in enormous and mysterious mansion of shadowy nobility. Characters are very lovely. The last couple episodes are different from the manga, but I haven't read it so I don't know how much.
Fullmetal Alchemist: Brotherhood

Very decent shounen set in the world based on 1930's Germany, but I dont't know why people treat as the best anime ever.
Violet Evergarden

Anime about people who try to find their place in world after the World War (well, it's alternative world version). Art style and animation are beautiful, stories are touching.

Movie finishing Violet's story. It is not bad in any way, but it felt inferior to other parts of the franchise.

I am not sure does it belongs here, but Marley and surrounding countries are based on 1930's Europe.
