I'm not into moe, fanservice, or predominantly high school settings. I'm also not really interested in any "coming-of-age" stories (unless they're as sophisticated as Dennou Coil, which was exceptional).

Some shows I've enjoyed include:
Psycho-pass
Monster
Ergo Proxy
Spice and Wolf
Shinsekai yori
Cowboy Bebop
Berserk

I'm open to any genre. From my own research, I'm thinking Higashi no Eden, Planetes, Rainbow, and Tatami Galaxy might be good candidates. But I'd like to get some feedback here as well.

Hmm..you might wanna check out Gankutsuou, it's an anime based on The Count of Monte Cristo by Dumas, I loved it and I guess, it's pretty sophisticated. Fascinating and get more and more interesting after every single episode!!! <333

I've seen Baccano!, Gungrave, and Black Lagoon, and I'm watching GITS. Will take a look at the others.

If you liked Ergo Proxy, I'd definitely recommend Texhnolyze, honestly one of the best "mature" anime I've seen. It really likes to "show not tell" and the story is extremely unique. I'd strongly recommend it to you.

Hellsing Ultimate. it's very entertaining, and has a awesome main character. not moe at all.

I think maybe Hourou Musuko.

It's about a bunch of kids, but I think the themes are rather adult. The main male character wants to be a girl and the main female wants to be a boy.

Edit - Higashi no Eden made no sense to me. It was kinda average because of that.

Edit 2 - Some input.
Le Chevalier D'Eon - Might find it boring, but I loved it. It's about demons, religion and a murder mystery.
Afro Samurai - Don't watch it all at once, it might be a bit boring.
Aoi Bungaku - A bunch of random anthologies by authors who killed themselves after they wrote their books. It's presented by this guy who explains the background of the authors, then the animation plays.
Tokyo Magnitude 8.0 - A girl and her brother go to a robot museum when an earthquake strikes Japan.

Btw this genre is called Seinen,so it may help abit your search. With that being said, Gantz and Gungrave ( a must-watch ) comes to my mind.

Yeah, just use seinen as a genre search. You'll find plenty of stuff that is close to what you want.

If you liked Spice and Wolf, try Maoyuu Maou Yuusha. It's scary how similar they are in terms of character relations and dialogue.

Out of the things you might watch, they are all indeed targeted to older audiences. Rainbow is some shock factor shounen in a seinen setting, it's not really mature


Anyway finish Ghost in the Shell, most anime targeted to older audiences are generally for young adults at best but GiTS also appealed to an older demographic(thirties)

Everybody is recommending Hellsing Ultimate, but in my opinion it´s not really mature.
Don´t get me wrong, I love it, but it´s about vampires X Vatican X Nazis.. the fact that there are buckets of blood doesn´t mean the anime is mature.

I will recommend fate/zero as a mature animu, it was a while back when I watched the first season, but I remember it had a good storyline and art (ufotable animation).

Break Blade (UTMOST EXCELENT ANIMATION!)

Hellsing Ultimate (series is good too, but too short for my tastes)
JoJo's Old OVA series (New series too!)
Kurau Phantom Memory
Macross Plus
Patlabor movies (the series has a bit of a comedy side, while the movies can be pretty dark)
ZOE: IDOLO (Zone of the Enders OVA movie. Theres a series too called Dolores,i but it has a more comedy side to it)
Hyouge Mono (Bit talking anime about Tea, set in edo)
Samurai Champloo
Now and then here and there.

I highly recommend Uchuu Kyoudai aka Space Brothers for you. It's definitely one of my favorite animes ever. IMO the settings is really nice, the pace is just right, the characters are lovely and the OST is just the best :P
