I haven't seen any of the other Gundam series and the first one looks really dated at this point, but I was wondering if I would still be able to enjoy and understand this one without having seen the original

This OVA series so far is just covering Char's uprising, which isn't covered in the original TV series. You could technically watch this without having seen the original, but it would really benefit you to have seen 0079 (or if that is too long for you, the 3-part movie series).

I invite you to at least watch the first movie compilation of Mobile Suit Gundam. After what you could watch the first OAV of The Origin knowing the initial settings of the characters (and avoiding typical prequel spoilers about several characters).
For the two others movies and the others Origin OAVs, watch as it suits you (as long as you respect their own numerotation).

The conflict whose premise you see in the Origin is the one who is treated in the TV series/movie trilogy. (who offers a conclusion for it) The movies eliminate various useless or exagzrrated elements of the original show (often good choices, sometimes less, making the story more compact and the first movie feels somewhat rushed)

Note: the mangaka wrote what you see in the OAVs inside the 0079 story: he used it as a "past chapter" to break the present narration (around what would be the beginning of the second movie if I remember it right)

True, he doesn't.

But the fact something created later is chronologically put before another work never made it the obligatory started point. So it is not a rule.

Example: better start with Prometheus or don't start the Alien movies at all? o_O

No, you don't need to watch original series at all

I personally watched around 20 episodes from the original, and so boring in my opinion. The newer Gundam series like Origin or Unicorn are by far 10 times better than the original series

The story of Gundam Origin takes places before the original series, so it is more like a prequel

No not really but I recommend watching the entirety of U.C atleast to truly get to know these characters, probably better impact.
