Top 4 best first episode I've seen.

Higashi no Eden
Suzumiya Haruhi
Seto no Hanayome
Nodame Cantabile

If I have to pick the best first 2 episodes, it'll have to be Higashi no Eden.

I recall Fruits Basket as having one of the best first episodes for me.. It made me laugh my ass off, and that was pretty much the reason why I kept on watching it.

I barely remember any first episodes except for Tengen Toppa Gurren Lagann. Literally breaking through the heavens, seeing that landscape between day and night, that would be the most awesome thing ever (and seeing as I sort of stopped watching anime altogether, it might just be the 'best ever' for me. The image is still vivid in my mind.

I really loved the first episode of Kimagure Orange Road. It was like the hallmark of the series, and it just stayed in my memories for years.

Witch Hunter Robin had a really cinematic first ep, I was really blown away by it.

Yes, it does. I've never liked the Lior episodes. They're okay, but not that good.

Anyway...
Code Geass and Death Note had very good first episodes.
Ga-Rei Zero as well, but it was very different from the rest of the series.
Macross Frontier
Mobile Suit Gundam 00
Mobile Suit Gundam SEED
Xam'd: Lost Memories

A lot of series have good first episodes, but these were some that really stood out.

I third Hayate no Gotoku!

To be honest, I dropped Haruhi S1 for a while because I really found it boring (in terms of TV airing) but I picked it up once watching it in chronological order. This was with NO knowledge on what Haruhi was before watching it. I saw it was exactly what it was -- an "amateur" video.

I think the idea of airing out of order was quite interesting, though.

Texhnolyze's opening was really amazing, really set up the rest of the series perfectly. I also agree that CANAAN's first episode amazing, the rest of the series let me down but the first episode was really good. Higurashi's first episode had me totally hooked, same with Cowboy Bebop.

I personally wasn't really hooked on Death Note till the second episode, and while i enjoy the first episode of Elfen Lied i wouldn't call it the best.

ef - a tale of memories, cause it doesn't need to be a blood-filled, over-macho'd nor action anime opener for me.
Brilliance lies in other things that flashy action.

To anyone who said Elfen Lied, let me buy you a drink, soda of course if you're underaged. :) The gore in that one episode was probably the most you would see in the entire season, and the wrap up of it all was so captivating, you were hooked before you had a chance to resist.

I think Ouran High Host Club might have that as well, I couldn't help but laugh the entire time when the club was slowing realizing that Haruhi was a girl. <3

Yes, this! ef - a tale of memories had an amazing opening episode.

I will also say Eden of the East because of the various unexpected surprises. Honey and Clover has always stuck with me too, it was something I know I was going to love. Also, Candy Boy.
