For me it would definitely be Kaguya Sama. Before watching anime I really wasn't a fan of romance plots in any other media as I thought most of the time they were really lazy and the characters had no depth behind them. Kaguya made romance my favorite anime genre and it still has some of the best characters I've ever seen in any type of media, as well as some of the best comedy (of course a lot of anime romances are really lazy and are basically a copy and paste of each other, but Kaguya showed me what a really well done romance can achieve).

Sword Art Online got me started in looking for anime of different genres when I was new to anime. It had a bunch of tags into one which got me curious.
I own every non mobile mainline sao game.

That would be Pokemon for me. That has shaped my entire taste of anime. Even though Pokemon is technically a kodomo anime, it really does feel like a Shounen with it's many Shounen tropes such as stubborn and tenacious MC, power of friendship, themes of "justice", tactical implementation in battles, etc. I'm a huge Battle Shounen fan now because of Pokemon. It has also influenced my taste in a few other genres besides Battle Shounen.

Other than that, Darling in the FranXX is another one that made an impact on my taste. It made me interested in the romance genre since it was the first romance anime I watched (if you exclude To Love Ru which is more of an ecchi comedy than actual romance). It has action which was my primary favorite genre at that time but the romance was also something that I loved a lot. Now romance is also one of my favourite genres.

K-on

It was the anime that made me realize you don't need muscly men and high school boys shooting laser beams at each other, to have a good time.

March Comes In Like a Lion, if I had to pick only one.

It introduced me to slice-of-life. It showed me that you don't need an overarching dramatic storyline to carry a show. You can still say plenty through well-written, well-acted, endearing characters, the mundane, "small" moments that hide depth and beauty, and the artistic and directorial touches. And on top of that it taught me (or reminded me) about some important things in life.

Probably Kaguya-Sama: Love is War. Before I was watching it, I mostly went for action titles only, but since then, I have a bigger variaty of titles I'm watching. I would've never thought back then that I'm going to enjoy romance and SoL shows.

I'd say Angel Next Door. I didn't have much expectations for this before, but it pleasantly surprised me because of how such a simple story with sugary-sweet romance can deliver a lot of iyashikei (healing) vibes and I can happily rewatch it to feel the warmth again.

This anime also proves that you don't need sakuga-tier animation to be perfect, as long as the heart of the story carries it. Good animation is a bonus but what matters the most is the story when it comes to romance.

Maybe SAO? The fact that it was one of the first series I watched might (partly) explain why I watched so many fantasy/isekai series after.

One Outs. It's one of the first shows I've seen after starting watching anime and it woke my attention and desire for more. Really enjoyed it and ended up re-watching it 3 times. It basically led me to where I am now and I'd probably not watch much more if I didn't watch it then.

I guess of right now....Mobile Suit Gundam 0079. I had watched some mecha anime like Code Geass and FMP in the past however, after really getting into an old school mecha anime, I kinda realized I wanted to explore the genre in it's entirety. Mecha is one of the genres that is ensuring my overall interest in the medium, so I guess I owe it a lot.

I would have said K-ON! if this were a few years ago, but right now, I believe it’s not just one anime~ it’s the whole body of KyoAni’s works that has changed my point of view and perspective as a viewer. KyoAni made me realize how simple life can be; that it doesn’t always have to be dramatic. Sometimes, a single empty lamplight can feel as impactful as many other things, and that happens when someone is able to connect and meet another’s heart.

I think most of my tastes in media such as fantasy with a great world building was already present, and I just didn't know they existed in anime too. But one that is very anime specific is mecha and it was either Digimon waaay back in the days or Code Geass (most likely) that awakened it and later on the Muv-Luv VNs which made me fully embrace and appreciate the genre

@rohan121 I always heard the inmense impact that SAO had on the community back in the day, but I'll never fully understand it.

@perseii I definitely have to watch March Comes In Like a Lion, I've heard it has some of the best characterization in the entire medium.

@Ms_Muffin I've heard it is amazing. I love sport animes/mangas, but I've stopped for now because I read Slam Dunk and Ao Ashi back to back and I don't want to quickly finish every good sports anime/manga.

For me, it was Bakemonogatari. I grew up watching Shonen anime, a genre based on adventure/action with fights. Bakemonogatari (or The Monogatari Series) is quite the opposite, despite having action and a couple of fights. It is a heavy dialogue-character-driven story, and for me, that's the charm of it. It was something different, and it extended my horizon as an anime fan. I can never find enough words to describe the impact Bakemonogatari had on me and how much I love it.
