Looking for something that either a) has enough hidden/layered meaning/symbolism that one can theoretically write a multi-page dissertation about it, or b) will abuse and screw around with my mind to no end

Out of all the anime mentioned I think Revolutionary Girl Utena comes out way on top as that has like an infinite amount of layers. With Tenshi no Tamago I'd think you'd struggle to dissect it since in my opinion it's just a bunch of mostly unconnected pieces wrapped in the same box. You could check out Nekojiru-sou, it has no dialogue and is pure abstract.

Someone mentioned [Lain: Serial Experiment]. That'll pretty much do it, especially if you're into cyber-punk stuff.

Some might not think it, but Neon Genesis Evangelion did that for me to. With Shinji's (main characters) self defeating attitude, and especially when you get to those later episodes with extreme deep introspection that nobody can seem to figure out.

And Berserk? (screws around with my mind to no end)

Can someone tell me if this is inappropriate or perfect? lol

I forgot to add Mind Game, that's a good one. Better than Angel's Egg if you ask me. Baccano! might screw with your head too, what with the way it constantly jumps around through time.
