I feel like I'm not accurately rating my anime because the words I use to describe it is too bland, even for the scale. It's hard to tell apart a 3 from a 4, 9 from an 8 and so on. Is there any way I can fix it? Or moreover what qualifies an anime to be a 5, 6, 4, and so on?

I just add up all the important elements(Characters, Story and Presentation) and then divide by 2 or 3 depending on what the show is about or its goal. After I found the mean I will just add the Enjoyment:

There's no concrete way to define whether something is worth a 1-10
Really it all depends on your personal preference and how you personally felt after watching the show. Your rating system is just as fine as anyone else's unless you end up rating Tokyo Ghoul root A a 10
10- outstanding and better than 99% of anime. these are few. only given to the most perfect things as there is no perfect anime.
9= really amazing
8=very good
7= good
6=fine work
5= average
4=has potential but its issues are bigger than its positives
3=somewhat bad
2= very bad
1=masterpiece
Would I like to add a modifier? For example, if I enjoyed it but there was something that was substantially irritating about the show. Then it gets a -1 or +1 based on that modifier.
My rating system is all relative. It has a floor, my 1/10, and a ceiling, my 10/10. Everything in between is rated relative to each other’s quality. This is why I developed my current definitive rating system, the Archetype System.
The Archetype System selects an archetypal show from my anime pool and assigns them to a value of the rating integers 1 to 10. An archetypal show is a show that’s not chiefly comedy, with rating and quality I’ve ascertained and will not generally be changed for the foreseeable future.
They serve as guides to where I might place the rest of the shows I watch, aided by gut feel and introspection. The quality of one show, say X, may be feel the closest to the archetypal shows for 7/10 and 6/10 so I'll just mull it over afterwards on whether it's a 6 or a 7.

Innate, transcendent, sublime, a piece of literature that crosses boundaries even compared to other medium. Such prose influenced me and have made an endearing feeling to my psyche. A phenomenal title that moved my compassion. Executed to perfección, presented a classic and finished a chef d'oeuvre.Truly a crème de la creme of this medium. One must see, to be enlightened.

A dazzling précis, elegant and refined, this names are not to be meddled. They are worthy enough to be a masterpiece, it's more of that I have a certain bias to the ones above. Flaws are done in by the pros. Hardly worth noting, nullified by the leverage. Clever, opaque yet vivid. Appellations that are ravishing in their content. Creativity allows mistakes, one must know what to keep.

Exceptional, pieces of works that are unprecedented. Marvelous utilization of what it has and done it firmly. Still in high regards, still in the higher echelons of the medium, with it's poise, it flies through the medium being the harbinger. Delightful to watch, despite some moments being not as tactful as the others.

Noteworthy, worth-watching. Solid through it's run, some certain mishaps that I just didn't like. Worthwhile with their own set of quality content that makes it amusing to watch. Though not exceptional, they still bear good memories that I can still look fondly upon.

Decent, fun, though not compelling. Shows that are enjoyable to a certain degree, but falls short. Whether it be the execution, ideas, or concept, something sticks out that are preventing me to forfeit for a higher score. Good watch, not enough substance to make it a lasting memory.

Middling, dull, mediocre, entries in this region doesn't attract much for itself, not good, but would not say it's bad. So-so everything in general. There comes a time it can spark something good, then follows up nothing to offer.

Riddled with flaws, though managing some good remarks. Inconsistent, but with it's inconsistency, comes a time it can do good. Flickers some flame to it's name, however ever so little. Be it be incoherent writing, bad pacing, or horrid delivery, you can find it here.
Not recommended however can still be passable for the schlock
3-Very Bad
Trainwreck, dreadful, crummy, anything worth noting here is meager. Attempts to be something anything decent, failed. This is where my enjoyment starts to detract. Butchered itself to be anything remotely satisfying.

Gutstakingly abominable, pure nauseous to even to watch/read from the premise alone. It was horrible to a point that I barely was able to keep attention and if I did, then it was just so awful that it warrants me to see the monstrosity it made. Though, taking the note in matter, it, however, somehow saved itself from pure anathema. From becoming a plague. Somehow.

It was a mistake that this was greenlit, an abomination that thrives to become one, painful memories of discourse that was painful to go through. As mentioned on my note, I pretty much didn't enjoy anything in this area, such disgrace to be in the medium, let alone be called a form of entertainment media.

I kinda want to make them longer, but I'm busy as it is and my ass is not up for more shit.
I only use the numbers to differentiate between between the shows I've seen, so I don't think that the rating has to mean something by itself or translate into a verbal descriptor.
Once in a while I will take a closer look at the ratings I've given, especially the higher ones and take into consideration if I enjoyed all shows I've rated 9 as equals. If not I would rerate the show(s) I would consider weaker or stronger.
The 1-10 scale I tend to divide into:
Low: 1-3
Medium: 4-6 (5 = average)
High: 7-9
Just use some sort of mathematical method.
Define what you want evaluate, like:
Quality of the plot and how it develops overtime
Quality of the animation
Quality of sound
How the characters develop over time
How the anime fits the genre
Et cetera...
Then rate them from 1-10 and make an average, or if you value them differently, give them percentages and do the maths.
It's not like you're talking about rocket science.
I don't know why topics like these even exist. It's a personal thing (like jacking off). Just pick absolute best for you (there may be several of them). This will be the 10. Then explore what you like about them, i.e. break up the shows into the basic elements as hard as you can. Watch other shows and start comparing. That's it.

The anime that the numbers link to are what I think are the most accurate examples of what deserves each rating. These will link to my own reviews of the anime when possible. Keep in mind that I rate anime on how good of a job they do at what they're intended for, hence why music videos and short films can get higher ratings than anime with obviously much larger budgets. I also put a fairly strong importance to my own enjoyment with my ratings.
10: Amazing, one of my favourite anime! - This rating is reserved for anime that I connected with on a personal level. I currently only have five anime with this rating. 9: Really good, but not quite a 10 - Anime that do an extremely high number of things right, but I wasn't able to connect with enough to boost up to a 10. This is also a rating I use sparingly. 8: A very good anime - An amazing anime that was fun to watch and was well made (with some exceptions). This is a bit softer of a rating than 9 or 10 so if the quality of an anime is insanely high and my enjoyment was only moderate it can still get an 8. 7: Pretty good - A great anime that I liked watching and would recommend to someone when given the chance. 6: Just above average - Although I don't feel that my time was wasted, this wasn't that great of an anime and I probably won't watch the sequel if there is one. 5: Average - Not particularly bad, but it also doesn't have too many good qualities and was generally pretty boring. In a way this could be seen as the worst possible rating since anime rated below this tend to be enjoyable as bad anime. 4: Poor, slightly below average - Not worth my time since I didn't get much out of them at all. If I watched it because it was popular then it wasn't a waste since I can discuss it after, but if it's unknown then it was a worthless watch. 3: Really bad. - Bottom of the barrel. I haven't rated any full length TV series below this rating. Although some things may have been done well, they were minor or weren't something I cared too much about. 2: There is barely anything good about this anime - "It's not as bad as a 1" would be the only positive thing I could say about it. This was less enjoyable than watching two slugs slowly trying to battle each other. 1: WTF did I just watch? Terrible, painful to watch. This is most common for anime around 1 minute long under the genre "dementia". - "Barely even anime" describes this rating quite well. There are only a handful of anime I gave this rating to that actually had somewhat traditional art/animation styles and many are either stop-motion or look like they were drawn by a 4 year old.
I don't understand why people complicate their lives so much when they want to give a score to something.
Since you can't measure the perceived quality (or enjoyment, or whatever guideline you choose) with the same accuracy that let's say, you can measure the length of a wall with a measuring tape, you just have to follow your own "intuition", which to me in practical terms means completing the sentence "this is something like a...." and then trust the first number that pops in your mind since it's highly likely that it's going to be coherent with your own general perception of what you had just seen.
Overthinking is a double-edged sword; while it can help you to increase the accuracy, it can also confuse you and lead you to a number that doesn't really reflects that perception as much as the first number did.
Basically I see the ratings as this
- 1,2,3 = really bad
- 4,5, = Not really bad but not very enjoyable.
- 6 = Average
- 7 = Above Average
- 8-9 = Good, enjoyed it
- 10 = Amazing
I have a somewhat mixed approach. I try to gauge and grade most anime objectively, as a function of their technical aspects (soundtrack, characters, character development, story, art, animation etc). "Enjoyment" is computed as extra points (if I *really* enjoyed the show) or deduced (if it really sucked). Granted, more often than not I just "eyeball" the score, but I still try to take all these into consideration.
Note that it's possible to really enjoy a show, while recognizing its shortcomings (and their grades will still reflect that). Grading solely based on enjoyment leads to these massively distorted numbers we see in the most popular shows.
As per the grading scale, I think MAL's definitions are a pretty good starting point.
An average (5) anime isn't necessarily bad; it just didn't do anything noteworthy. It's either a filler show (Masamune-kun no Revenge), a bad show with great technical qualities (Gantz) or, rarely, an otherwise good show that has technical or development flaws (Blue Gender).
Everything below '5' is subpar and everything above '5' is definitely worth watching, with most anime falling between '5' and '7'.
'10' is either a cultural touchstone or a masterpiece that resonated with me.
'1' is almost invariably reserved for anime that ultimately harm the medium or the genre.
