Shonen isn't my favourite genre and I don't know much hidden gems of it, but if you just started watching anime the more popular series should work pretty well.
For action definitely check out Kimetsu no Yaiba, which has amazing action animation and music. The plot is quite simple, but the production quality is great. Although the story in anime isn't finished yet.
If you prefer something more mature and complex, you should watch Kiseijuu. The good thing it's already finished.
But if you don't mind unfinished anime I recommend you watching one of my favourite shows Chainaw Man. For me it's very different from other action shonens and that's probably why I love it so much. I highly recommend reading the manga, because anime ended just before the best part of the story.
