It's more of a unofficial thing, but it's basically seasons, they aired 1 year after but the Producers call it "Part 2", but I just call it the next season
What I see form people opionon about Joe you either love him, hate him, or both. People that hate him don't realize how charming he is and why people like him. Joe Yabuki is really unique since we don't have characters like him anymore, the last one that I can remember that was similar to him was Yusuke Urameshi from Yu Yu Haksuho. The only thing I can think off why this the case is because the stories of boys becoming men pretty dying out. The have replace by Gary Stus(cough Kirito cough), have unrealistic beliefs, and whinny characters. These have become the staple and stories of about hard working men have died out. Which I find a shame, because one of themes of Ashita no Joe was showing the struggles and overcoming living in the slums, and becoming an something bigger. Joe went from a noboby to one of the best boxers in his weight division. Which I love this aspect because underdog stories are one of my favorite storylines.
That arc also known as the Rival arc is a close second due to the rivalry of Joe and Riikishi, the struggles both have to overcome for the fight to happen, and the ending, but I like the arc after it more due to Joe overcoming Rikkishi death. The fight of Joe vs Rikishi is like that of the fight had a lot of build up and lot of hype around it, in this fight we had no idea who was going to win. That makes interesting, throughout the fight they pretty much equal, and they use every trick they had. The most intense moment in that fight was when both of them did the No Guard Stance, in this one every attack first was going to lose.Joe lost because of this due to his cockiness, which led to his down fall. Every fight Joe had expect this one I always was rooting for him to win, but in this one I was sure who wanted to win since I love both so much. This fight led to me fall in love with the series due the result with Rikkishi death,this gave me an impact I haven't experience in along time. Which caused me to cry manly tears and not stopping think about this series. The last I experience this was in Rurouni Kenshin.
I agree with what you say about the ending, it was pretty the perfect ending. The ending was very unique since Joe Yabuki was the first main character to ever die. It manage to accomplish everything the series wanted to tell, Joe Yabuki pretty much the champion to the hard working man. He achieve something remarkable in the sense he fought the best and give him one of hell of a fight. Despite the fact he lost, I feel it fitted a lot since in the end he one the war, in the last few panel, Jose couldn't get up, while Joe could and when Jose was declare as the winner the face he carried was looked of defeated man. What believe after this fight Jose pretty much was no longer himself, he blamed himself for Yabuki death and he felt he doesn't deserve to be champion. Jose was fighting an opponent that he scared off and that tramized him, to the pointed he retired from boxing. This why I found it to be so perfect because how it affect the message of this series and how it pretty created an genre that series series would kill off their main character.
Ashita no Joe challenge the anime and manga industry by take risk no other series tried to do. It was the first one to establish such dark themes, Killing very important and popular characters, and created the tragedy genre.
Glad you loved it, I pretty much felt the same way as you, expect I prefer Joe over Ippo. Due to the darker side, I find it to be better, and enjoyment.
Joe is probably the biggest reason why I love this series due to his personality, his character development, and the charm he has that made me always like him. The moment he become my favorite character in any form of entertainment was the kind of person he became in season 2.

for me my favorite arc is The Rise, The Fall of Joe Yabuki
Favorite fight would have to be Joe vs Carlos
Faovirte moment when Joe tells Danpei why he want to stay in the bantweight. Due to this showed how much Joe has grew through the series and how much he respects his rivals.
