I tend to reserve my judgment till the end of an anime but excluding movies I immediately took a liking to Cowboy Bebop and FLCL.

Kaiba.

I was vaguely paying attention to IRC; some random person apparently needed help on deciding what to watch (thinking is too hard!). Someone mentioned Kaiba was not very good and really weird and most people agreed. This made me realize that the subs for Kaiba had finally come out so I got the first two episodes (I obviously was not paying attention to Tokyo Tosho). I watched the first two episodes back to back and when I was done I was simply amazed; it was love at first sight! I've always adored anime (or any form of media) that makes you question what exactly is happening. Instead of numbly watching some random un-funny shit or a re-hashed love drama I can watch Kaiba. Though perhaps the unique and interesting art grabbed my attention first.

Shuffle! - The opening scene of seeing Kaede... I was just like, "Woah! This anime should be good! :D " and it didn't disappoint!

Another one has to be Death Note, the first episode was just insane...

There are many others but I can't really think of them right now >_<

Gits SAC: 2nd Gig and Bleach.

Usually it takes about 2 - 5 episodes for me to decide whether to love it, like it, or hate it, but for some reason those two just got my attention right away.

While back before I was really into anime aside from random eps of dbz and yu yu hakusho I was flipping through channels and stopped at tech tv. It was airing the first two eps of gatekeepers 21. I was amazed, shortly after finishing the 6 eps I found out about the original. Thats when I bought my first anime as well. For the longest time nothing was greater then Gatekeepers and gatekeepers 21. I not only fell in love with those two shows but it also thrusted me into this relationship with anime in general.

Also of my three 10's The only one that had me addicted like a herioin addict from the getgo was Full Metal Alchemist. I loved it from the first few minutes. And after eps 3 I knew there was no better anime out there.

Both Haruhi and Lucky Star caught me off guard and I was slowly being pulled in through the first episodes.

The Melancholy of Suzumiya HarukaKimi ga Nozomu Eien was just too sweet, so of course that one won me over too.

Mai Hime because of the sounds and the action and the heroine.
Gundam seed because of the situation kira was and wanted to keep watching.
Kimikiss pure rouge nice balanced characters and nice clifhangers.
Elfen Lied (just watch the first episode)
Death note (interesting introduction)
And some more.

I didnt give them all a topscore, these were love a first sight but that doesnt mean some points didnt dissapoint me while our relationship was developing hehe ;p.

That usually doesn't happen to me a lot, but it did with one anime: Majin Tantei Nougami Neuro. I feel in love with Neuro's character design. It reminded me of Jack Skellington from The Nightmare Before Christmas, which is why I was so attracted to it. Then, when I watched the actual show, I loved his personality! I was then hooked on MTNN.

Most animes take a long while before me really liking it. I even hated my Lucky Star's (my top anime of all time) first episode. I think the one that really won me over immediately was ef ~a tale of memories~. By the time I reached the second episode, it hit my favourites list immediately (of course, it's down to 7th in my list as of now. XD)

Welcome to the NHK.
Thought the first minute was lame.
The next one I liked.
After a couple more scenes I knew I would like this show.
I think by the 3rd episode I "Loved it".

Dragonball Z.

Come on, I was like...10 when I saw it. You got a little kid watching guys with crazy hair fighting with enemies that were cooler then the power ranger monsters, while yelling crazy things and shooting energy from their hands.

Hell YES i'd love it. =D

Initial D and Hajime no Ippo.

They're the type of animes that I had to see the next episode right away. I think I started Initial D first season a little before 2nd season came out, so I marathoned that really fast. Got my friends into it as well and now they all have cars that are in Initial D. FC, 240sx, Integra type R, EK Civic, etc etc... Same goes with Hajime no Ippo. We actually bought some gloves and mouth pieces and sparred in a friend's backyard. Fun fun. :D

Gintama.
It only took a short commercial where I barely understood anything to fall in love.

After seeing at least one episode I loved Shigofumi, Jubei-chan, Innocent Venus, and Mai-HiME.
