Actually that's one thing I didn't like about F/Z Lancer. He goes on about how he wants to serve his lord and be loyal and stuff, but in the end he fails to do that because he's too busy being honorable with Saber.

F/SN Lancer is the total opposite of what you just described xD

Yes, but he knew his Master wasn't really one worth pledging loyalty to. Plus the exchange with Sola-Ui had him confused as well.
But oh well. I admit that my reasons for making F/Z Lancer my love are petty, so sue me. :>

He may be a douche and have a superiority complex, but it's understandable considering his skills, but aside from that he's not all that bad of a person. He has pride in magic lineage so something like the HGW he participated in is a total joke.

He was expecting powerful and skilled mages from respectable lineages, but what he got was:
1. A half assed mage.
2. An unorthodox mage that has 0 mage pride.
3. A can of worms.
4. A Goddamn Priest (enemies to mages, basically)
5. A dumb serial killer that has barely any connection to magic.
6. His muggle student who is a thief btw.

Coincidentally, on my first spoiler glimpse of Blue Lancer's Master, I almost had a heart attack thinking she made a return... it was only through the sheer goodwill and sensibility of some here that I learnt she cannot return from her fate in /Zero. Phew.

"Grail War" is not regarded as anything significant - it is some "backwater ritual the Three Families do occasionally". There are multiple "rituals for grail" like that all over the world and no one is sure if any of them work. And this particular one failed gloriously again and again.
. Fuyuki Grail war is basically like a private counter strike server, where 99% of participants are hackers.

Kayneth, despite it taking place in location Association OR Church dont give much shit about for most of part (Japan), expected the participants to AT LEAST be honorable mages. He expected to at least have some "honor" or "fun" participating int his, even though it was nothing important. Basically like that party you go solely for snacks to.

If someone randomly decides to back out of the Grail War in the middle of it, can they? If yes, what of their Servant's wishes? Tied to another Master or sent back?

You can quit anytime. Use your command spells and seek shelter somewhere. Your servant might get pissed though so you better do it when they aren't around.
