I recommend you try last year's Yagate Kimi Ni Naru or Doukyuusei.

Well, that's the case with most anime, to be honest, not just the yuri/yaoi kind. I personally find doukyuusei to be garbage but since it's a movie it is pretty much as "one and done" as you can expect it to be.

Besides which, it's not that easy to have an actual conclusion to a love story unless you're just doing Disney stuff for toddlers.

Attack on Titan has a pretty good story I hear.

I feel to see what the sexes of the romantic artefacts therein really say about the quality of the story. Would Attack on Titan's story suddenly be better were Ymir male?

YES! I need this. Loveless is one of the only anime that comes to mind when I think "both" since it had some cute yuri moments. But I really need a show that focuses on both equally. It'd be amazing.

I'll take a hard pass on yaoi... Though now that I think about it, I don't think I've actually seen any yaoi anime (unless Naruto counts).

No, I don't care, as long as I like it and it's not fetishized or anything.
I think, there are overall just more realistic SOL Girls Love than Boys Love manga / anime.
Although the GL lacks in any other genre and setting. It's basically like 90 % SOL?
