It's not minimalism it's realism - the Japanese are known for being a very harmogenous race and Mushishi relects that. I think that - in the context of Mushishi the character design is fine, it'd look stupid with ott characters.

I'm very impressed with Death Note, considering it aired in 2006. Still looks just as good as anything today.
Fate/Zero and Bakemonogatarai series are also great.

Even though I found it a bit boring, 5 Centimeters Per Second stands out, but loads of anime have stunning artistry. I think Ghibli films have a great look to them too.

I don't know man, I only watched 3 episodes so far, but all the boys looked exactly the same, I don't think that's realistic at all. Japanese people don't look the same.
