I'd recommend Kaii to Otome to Kamikakushi/Mysterious Disappearances, it's one of my favorites so far this season but one I'd expect to be overlooked for more popular titles (Mystery) (Supernatural)

Karasu wa Aruji wo Erabanai/Yatagarasu: The Raven Does Not Choose Its Master, is another anime I'd recommend checking out, that's not an obvious popular choice like Wind Breaker or Kaiju No. 8 or something. (Fantasy)

I'll just add this third one as a bonus recommendation, Kenka Dokugaku/Viral Hit (Action) (Comedy)

Based on those titles and what I skimmed through via your profile I can say that the redux of Bartender (Glass of God) is a decent, atmospheric slice-of-life that is doing a fine job as a reboot; Unnamed Memory has had a promising start and boasts some good animation for its action, if you are in the mood for a hard-to-get romance suffused with a bit of mystery; and if you are seeking an isekai somewhat similar to KonoSuba but with a greater emphasis on world-building then I can recommend Tsukimichi as decent expenditure of time - it is a bit over halfway finished airing through its second season and has a first season that you can start with.

i admit i have yet to start a real winner from this season, but so far sand land has been actually pretty good and you have DBZ in your favorites, so it might hit the nostalgia spot for you like it has for me, especially considering the terrible news regarding toriyama.

wind breaker has also been fairly fun so far, not mindblowing or anything, but a good, solid show for sure.

Maybe Kaiju 8, though it's too soon to judge since only 1 episode aired so far.

Aside from what's already mentioned I've been really enjoying An Archdemon's Dilemma: How to Love Your Elf Bride so far, it's a pretty cute romcom with fantasy and action elements. I've also enjoyed Re:Monster quite a bit but I know it will not be for everyone.

I'm very much enjoying Train to the End of the World (https://myanimelist.net/anime/53356/Shuumatsu_Train_Doko_e_Iku). Good surreal adventure-type story.

Also enjoying the heck out of Tonari no Youkai-san (https://myanimelist.net/anime/51461/Tonari_no_Youkai-san). Good worldbuilding about a Yokai living alongside normal everyday society.
