Btw, if you want a gritty anime with powerful feels you should watch Rainbow: Nisha Rokubou no Shichinin (it's nothing like Gurren Lagann in terms of story or premise, but the relationship of the characters are all too similar and impactful; it's an underrated masterpiece).
Sorry dude, but it's not that the hints weren't there in Re:Zero... it seems that you actually missed every single last one of them. Ever wonder why Subaru smells like the witch every time he returns by death? Or how he came into contact with Emilia at the EXACT moment that she lost her princess thing? and wanted to save her so badly that he would return back from death to do it?
Why does she stop him from telling others that he can return to the past by death? In fact, why does she even know?! Why does Emilia call herself Satella the first time and never correct Subaru? Why did puck call Subaru a "good guy" after he said he thought it was a pretty name (highly likely that she's related to the witch in some way) in the end betelgeuse said he'd never forget what she did for him. Doesn't that make Subaru similar to betelguese in some way? Why does the witch not look happy to see betelgeuse in the last episode?
There's a bunch more but these are the main ones I remember.
To answer your questions in case you still couldn't figure it out, the witch most likely brought him there for the purpose of saving Emilia. If she's powerful enough to allow somebody to return from the dead, universe shifting isn't too far off. It's possible she used magic to find the best person in all universes for the job, which Subaru definitely would be given how stupid and direct he his. The cost of returning by death is probably that you can't tell anybody because it upsets the balance of the world. (Typical magic stuff).
This is all just speculation, but it's very obvious that it's something along those lines given all of the hints.
Also, I wouldn't be surprised if the witch didn't agree with the witch's cult. She may even be an alter ego of Emilia. I'm sorry you couldn't enjoy it, but the anime definitely had a lot of thought put into it and will allow you to think if you understand psychology.
