I'm really confused why can't they just come out and give us a date? They keep saying this fall but that tells us nothing.

According to a recent news article by Anime News Network the show is supposed to be a double cour and will cover both the upcoming Fall and Winter seasons.

If they really want to air a double cour in these two seasons then they will have to start in October.

Another recent article from ANN says that FujiTV(the station that airs Kimetsu) has announced they will air it on Sunday this fall and winter.

All these hint that if it wants to air a double cour in Fall and Winter it will have to start sometime in October. However Ufotable and Aniplex have been really mute about it and they haven't given us a definitive date and I wonder why that is?
It could be that they are avoiding a date reveal in case they have to delay it. But Fall is almost here and I think if they wanted to delay they would have announced it. But they have already booked the timeslots for Japanese channel.

What are your thoughts?

I've been thinking about that too, as the news came out randomly maybe 3 months ago that this season will air this year itself, and now even though October is just around the corner, still there isn't any fixed date for this

They really saving the release date after Mugen Train airing on TV. I wonder why.

There can be many reasons as to why that is. If you have any experience with how the anime industry works you’d know that the main reason for withholding information regarding sth like a release date, is usually due to either production problems, or the licensors and production committees simply wanting to build up more hype and suspense, usually it’s the first one, production issues with anime are more common than you may think, and for a series like DS with stellar production, issues can come up at any point of the process. And also they said the release date will be announced on the 25th of September so just be patient.

Because the series is currently profitable, so everyone may want a piece of it. When too many parties involve in the production, it can cause troubles. For example, if Fuji TV wants to broadcast the series on its nationwide system, the station may force the committee to air with the schedule that is most beneficial for the station. Fuji TV is one of the largest TV stations in Japan, so their influence is huge.

Another scenario may come from staff. In July, Zennitsu's voice actor got Covid and went on hiatus several weeks (https://www.animenewsnetwork.com/news/2021-07-12/hiro-shimono-recovers-from-covid-19-resumes-activities-on-tuesday/.175025). Since June, Nezuko's voice actress has debuted numerous songs for her first album. In the latest KNY game promotion, she had signs of sleep deprivation, so she has been busy (https://twitter.com/kimetsuHINOKAMI/status/1436302134102749186?s=20). Additionally, if any key personnel of Season 2's production or their families got Covid, it can delay the schedule, too.
