Compared to the manga...

English-translated manga is not even up to date with the current first season of the anime. I'm assuming what I had access to was up to date. So how are they making a second season?

Not that I'm complaining considering this is one of my favorites but I'm still confused on how anime is made to be completely honest. Aren't they based on manga?

The anime is based on the LN, that is why the manga didn't reach out that far

Well this series is based on a Light Novel. The manga is just adapting that Light Novel. If we look there are currently 10 light novels in Japanese (seven of which have been translated to english). The end of the anime only goes to volume 3 of the light novel meaning that they have 7 volumes still to adapt (and more on the way as the series is on going). Manga isn’t always the source material. Hopefully this answers your question.
