Something more serious like Mushishi, NHK, Black Laggon...

Spice and Wolf
- Similar to Mushishi in that it involves a trader helping around people with problems. This one's more lighthearted and involves romance, but is nevertheless also a mature show.

Tatami Galaxy
- Very similar to Welcome to the NHK, like they're clones of each other, but Tatami Galaxy is more abstract and less depressing.

Cowboy Bebop, Jormungad, Phantom: Requiem for the Phantom
- All these shows are gun-packed flicks filled with assassins and mercenaries like Black Lagoon.

I'll throw in my personal favorites:

Nana
The best "mature" story I've ever seen in anime, bar none. The way it deals with adult relationships is unrivaled. Starts off whimsical and even childish, but gets really dark later on.

Shinsekai Yori
- Has one of the greatest plots in anime, and very suitable for adults. A slow-burner that really pays off in the second half.

Wolf Children, Jintai, Serial Experiments Lain, and Shirobako are some good mature series.
+1 K-On! is best mature anime. The cute:edgy ratio of seinen anime is pretty even and there are even anime like Gakkougurashi that do both. There are also those rare "true mature" seinen anime like Bartender which are arguably more similar to josei since most men never grow up or something like that. The fact that Oreimo and One Punch Man are among the most popular seinen anime really says something.

I'd also say HxH, 1999 at least. Its shounen with logical battles and A Sh*t ton of death, its dark af.

Gangsta.
Mostly all adult cast with adult themes throughout the show. If you enjoy it, then I suggest continuing on with the manga as the anime ends on a cliffhanger of sorts.
