Nothing medievel, but more like WWI or WWII setting.

I'd like to see one with a nice and good story.
And i'm kinda a fan of Airplanes, so if they involve pilots or so then it's a big plus

I've already seen, Grave of the Fireflies, Valkyria Chronicles, Last Exile and Sky Crawlers.

Sora no Woto when the later episodes roll in.
Gundam IGLOO or Gundam 08th MS Team, both might be somewhat of a stretch.
Senkou no Night Raid, actually set in WWII.

Unsurprisingly, most of these happen to be mecha as well;

Armor Hunter Mellowlink
Armored Trooper Votoms: Pailsen Files (These two are the most war based Votoms series, the others mostly focus on smaller conflicts)
FLAG (Highly realistic, even with the mechas)
Legend of the Galactic Heroes (Has a couple of ace pilot characters and a bit of dogfighting. Also the best space opera/war drama I've seen yet.)
Macross (Obviously lots of aerial/space battles here)
Mobile Suit Gundam (Focus on the mecha obviously, but there's also the Core Fighters for the occasional fighter action)
Mobile Suit Gundam 0080: War in the Pocket
Mobile Suit Gundam 0083: Stardust Memory
Mobile Suit Gundam MS IGLOO
Mobile Suit Gundam: The 08th MS Team
Mobile Suit Zeta Gundam
Nana Toshi Monogatari ~ Hokkyokukai Sensen ~ (Almost exclusively naval warfare)
Seikai no Monshou
Taiyou no Kiba Dagram (Just seen a bit of it, but it seems great so far, with a unusually realistic and political minded plot)
The Wings of Honneamise (Has a bit of WWII-esque land battles in the end)
Zipang (WWII/modern Naval battles)

Haven't seen these, but Macross Zero and Yukikaze should fit right into the aerial warfare request.

Oh, and if you're really really desperate for any sort of air battles, you could always try Strike Witches, and try to ignore that it's all really about panties.

hmm..

I'll definitly try watching FLAG and ofcourse The Cockpit.

Just saw ep 1 of Sora no Woto yesterday, but it reminded me kinda a lot of K-ON, so i doubt that i'll look further in this one.

And I should also start watching macross since I saw the movie and Frontier..

But if people have more series or movies that take place during one of the WW's or in some parallel way (like Valkyria or Last Exile), u can keep giving them.

Xam'd: Lost Memories and Eureka Seven are more futuristic sci-fi wars stories but might interest you anyway.

The Sky crawlers is a film about pilots. Although it has been criticized by it's slow pace by some people, it has the best dogfights ever seen in an anime.

Added Saikano, Area 88 and Pumpkin Scissors.

I've already seen Allisson and Lillia, quite enjoyable series i must say.
And i've also seen Skycrawlers, which was very good especially the animation of the dogfights.

Anyway this should be enough for now.

The Area 88 OVA. I heard it is way better than the series and I'm watching it right now and it's great. I haven't seen the Tv series though so I cant compare them.

Seconding this. Be sure to watch the main series first (110 episode OVA), skip the first 2 episodes and watch Overture to a New War, better version of the first 2 episodes. Other than that, skip the "prequels" until after you have seen the main series.

Seconding this as well. Most, if not all, the battles in this series are aerial battles with fighter jets/mechas, there is also a supernatural element to this series as well. Art is fantastic and the story is decent as well. It is also the first, chronologically speaking, instalment of the Macross series, so that's a plus.

Haven't seen it myself but yeah, you can try this option if you want.
