What are the best anime to rewatch?

I have seen all of the shows I am interested in and have access to (stuff from across every genre) and now I find it hard to get invested in anything new. What are some anime you enjoyed watching a second or third time around without getting bored/fed up? My personal choice is HxH.

Ofc, I've also rewatched Hunter x Hunter several times. I've also rewatched Attack on Titan several times. I think both are worth rewatching multiple times :vv

From what's on your list, I'll go with Cowboy Bebop, Kids on the Slope, Mob Psycho 100, One Punch Man, and Ping Pong. You'll likely enjoy rewatching all 5 of those.

I rewatch TAILENDERS at least once every year because it's just 27 minutes long and I keep noticing something new everytime. Black Rock Shooter (TV) is similar in that regard, I only got into the series this year and yet I already rewatched it three times (partially because on my second viewing, I wanted to see if my headcanons make sense and tried focusing more on every second Kagari is on screen to the point I noted down my observations second by second). Expelled from Paradise and Kabaneri (especially the movie version) are weirdly comforting to rewatch, too. Maybe because they both only become more relevant as years go by? Since the former is about progressing over-digitization and the latter puts a lot of emphasis on what fear makes us do.

Also, for some reason Azumanga is great rewatch material indeed. I remember when I rewatched the show in my early 20s, I realized how, on my previous two rewatches, I somehow never paid much attention to just how often we see Kagura crying over something, even before she joins the main cast.

Mine personally would be Mushoku Tensei, OPM S1, and Kaguya-sama, mostly for the perfect production they had, along with some incredible depictions of each character in their respective adaptations. I tend to like anime that had incredible voice acting, animation or production since they leave a stronger impression on me.
